It came out very nice. I'm not too concerned with cutting down calories, so I used sugar and real eggs, but the applesauce I kept, and it's nice to know I can bake without butter :)

Any idea how I can make this fluffier though? Or is banana too moist to make something fluffy with? I'm thinking of putting in a little extra eggs.
