Simple Stir-Fry – Even You Can Do It

07-02-stir-fry-lunch.jpgOne of the most difficult parts of college is eating right. For those of you without a meal plan or with any desire to remain healthy, here is a SUPER simple recipe I came up with. With tons of options, you can almost bet that you can find the ingredients in your fridge right now!

Ingredients:

2 boneless, skinless chicken breasts

3 cups veggies of your choice (some good ones: onions, carrots, broccoli, cauliflower, peppers)

2 tbsp vegetable oil

2 tbsp soy sauce

1 tbsp another flavorful sauce (teryaki, barbecue, etc) – it’s your choice, be creative!

1/2 cup white rice

Alright so let’s begin:

1. Heat up a frying pan to about medium and add the vegetable oil. Add chicken. Cook chicken on each side for about 10 minutes, until browned (HINT – cut the chicken open at the widest part in the pan to see if it’s cooked!).

2. In a small pot, prepare the rice according to directions.

3. Once chicken is cooked, remove from pan and cut into strips. In meantime, add all the vegetables to the same pan. Throw in 1 tbsp of each of your sauces.

4. Cook veggies for about 3 minutes and then add chicken strips. Add last 1 tbsp of each sauce and mix around the chicken and veggies, soaking up all the flavor! Only cook this for about a minute.

5. Once cooked, mix with rice in a bowl. If you’re feeling ambitious, eat it with chopsticks!
