Intro to Cooking: Chocolate Avocado Mousse

Keeping the healthy-but-good vibe going (AKA chocolatey things that won’t blow your Spring Break diet plan), this week I bring you my spin on a recipe that has been making healthy foodies (and even not-so-healthy foodies!) gaga for years: chocolate avocado mousse.
Featured ingredient: Avocado
Based on recent studies, the avocado is another anti-cancer food. It’s also high in potassium and monosaturated (read: good) fat. Eating avocados can promote healthy skin and hair. Plus, it’s silky texture and muted flavor make it the perfect base for just about any sweet recipe.
Recipe:
1 avocado, halved, skinned and pitted
½ cup cocoa powder
1 TBS vanilla
½ cup of your sweetener of choice (Splenda, Stevia, Truvia….)
¼ cup chocolate milk or milk substitute (optional)
Instructions:
1. Cut your avocado in half horizontally and twist the halves in opposite directions to break it open. Remove the pit and skin the avocado. Chop it into a few medium-sized pieces and put it in the food processor.
2. Add the cocoa powder, vanilla, sweetener, and milk (if you’re using any) to the food processor. Secure the lid and blend on high for about thirty seconds, or until your mousse reaches desired consistency.
3. Serve it as is or chill in the refrigerator. Share with friends. Be proclaimed healthy foodie goddess.
