Intro to Cooking: Taco Burgers

You read that title right. Taco burgers.

These are a few of my favorite things: juicy beef patties, chips and salsa, avocado on anything, rice and beans. I asked myself the other evening: why not combined these things? It could be… healthy. Okay, hamburgers can be pretty unhealthy, but if you use the right ground beef, the right toppings, and the right hamburger bun, you can have yourself a reasonably healthy meal.

I also wanted to include a recipe that wasn’t good for just one or two people, but something that you could make when you invite your friends over to your summer apartment.

When making hamburgers, I like to start with high-quality, lean ground beef… not the burgers that come in the freezer section pre-shaped. You can always talk to the butcher in the grocery store about the best kind of ground beef to use; they’ll be able to point you towards something leaner and higher quality.

When it comes to burger toppings, I used to be a traditionalist. Cheese, lettuce, ketchup and mustard, maybe pickles… Plain and simple. But in the past year, as I’ve tried to eat healthier, I’ve found that I love a lot more toppings than I thought I did. For these burgers, the two stars are avocado, beans and homemade salsa.

Avocado is one of the healthiest foods out there. It’s high in vitamins K, C, and E, folates, potassium and fiber. Perfect? Yes. However, avocados are pretty high in fat, even if it’s a good fat, so you don’t necessarily want to sit down and eat four avocados by yourself. Probably not a good plan. I’ve written about beans before, but they are a great source of protein and fiber, and a great way to add an extra something-something to a dish. Salsa is, of course, a great way to include fresh tomatoes into your diet and making it yourself isn’t just easy, it’s a great way to cut out unnecessary sodium and preservatives.

Ready to cook!? As a warning, this recipe is a little more involved than other ones I written… but if you try it, you’re in for a definite treat!

Taco Burgers

Serves 6-8 people

You’ll need…

⦁       1 lb of lean ground beef

⦁       Pepper

⦁       About 1 tablespoon of taco seasoning

⦁       6-8 hamburger buns (if you can buy these handmade from a local market, do so!)

⦁       1-2 avocados

⦁       1 onion

⦁       4-5 tomatoes

⦁       1 jalapeño

⦁       2 limes

⦁       1 can of black beans, drained and rinsed

⦁       1 can of corn, drain and rinsed

⦁       6-8 slices of pepperjack cheese

How to make it…

In a bowl, mix ground beef with a pinch of pepper and your tablespoon of taco seasoning. Mix with a spoon or your hands. Divide the meat into 6-8 equal servings and form into patties. You can cook these on a grill outside or a grill pan inside. Either way, you’ll want to use medium heat and a nonstick cooking spray before you start. Cook for about 10-15 minutes or until well done in the center.

Halve avocados on a cutting board and twist apart. Use a spoon to scoop out the pit. Use the same spoon to gently remove the avocado flesh from the skin. Slice into about ½ inch thick slices. Set aside.

Halve and squeeze the tomatoes to get rid of the excess water. Chop up tomatoes, onion, and jalapeno (be careful of the seeds!). Combine in a large bowl with the juice of 1-2 limes. Set aside.

Rinse and drain your cans of black beans and corn. Combine in a bowl and set aside.

When the meat is done, assemble the burgers. On the bottom bun, add some corn and bean mixture and the cheese, then the burger, followed by avocado, salsa, and the top bun. Enjoy!

Econ 101: The Dating Game

Here’s a lesson they probably won’t teach you in college: The Economics of Dating.

What’s the fundamental lesson they teach you in Econ? Why, supply and demand of course. More of a product, means less of a demand, while less of that exact same product causes people to want it like whoa. Now apply that to dating. It’s pure genius: limit your supply, and the guys will be sure to demand. These guys seem to think this is the perfect formula for them in achieving absolute success in the dating world. But hello, not to be obvious but I think Beyoncé said it best: Who runs the world? GIRLS!

So ladies, this is for you, your Intro to Supply & Demand.

Lesson 1: Sex

For the new guy in your life, here’s a way to keep things exciting. When it comes to sex, play hard to get (not too hard though. Guys like a chase, but they don’t want to feel like it’s never going to happen between the two of you.) When you finally do give up the goods, switch it up each time. Showers, couches, parks and movie theaters make for great spur-of-the-moment sex.  Each time you make him wait, he’ll come begging even harder. Remember, spontaneity is sexy!

For the longtime love: uh, if you suddenly begin to deny him the goods, he might suspect something’s wrong. Or worse, he might ditch you for that new spontaneous girl (see above).

Lesson 2: Availability

For the new guy in your life: Don’t make yourself too available. You’re a busy girl with a life of your own, now’s not the time to begin clearing your schedule for a guy you just met. You know how guys love leaving us girls waiting by the phone? It’s time for you to play that role. If you seem like your time is high in demand, he’ll be eager to get his share of your time.

For the longtime lover: You’ve been available enough to maintain this relationship for this long, don’t mess that up now by making yourself less available. Spending time together is key to maintaining a successful relationship, so keep it up.

Lesson 3: Social Life

For the new guy in your life: Here’s another “limit your supply and the guys will come demanding” guideline. You have your own friends and you have your own social life. The new guy needs to know that. Just like he’s not expecting you to tag along with him and his friends, you’re also anticipating that he’ll be understanding when you just want to have some girl time. When you do finally decide to hang around each other’s friends, it’ll be refreshing. And when you finally come back together after having been apart for some time, it’ll be all the more worthwhile.

For the longtime lover: Same rules apply. Bringing your signif other to hang out with your friends every now and again is totally fine, but you don’t want to end up being that girl that doesn’t get invited anywhere because your friends know your boyfriend will be attached at your hip.

Here’s a quick review:

You (minus) your supply (plus) some sex appeal = an increase in guy’s demand.

Easy huh? Limit your supply and the guy’s demand will increase. It’s almost like tricking him into thinking you’re some sort of hot commodity, LOL!

This is probably the simplest sort of economics, ever. I wish they would’ve taught us this back in…I don’t know, high school?


One Month Challenge: Stop Stress Eating, Week 3

When I started writing this week’s post, I really worried about it sounding like a “Dear Diary…” kind of deal. Stress eating, and the reasons behind it, are so personal, for every single individual. The reasons I stress eat can be totally opposite from the reasons my best friend stress eats or the reasons my boyfriend stress eats. It’s so dependent on life circumstances, and personality, and, when it comes down to it, the way each and every one of us thinks. Which, I hope we all agree on this, is different for everybody. Thought is just not homogenous across humanity. Obviously, I’m not any kind of professional, and everything I write here is based around me and how I think these things through… but I hope all my fellow stress eaters will be able to get a little insight into their own lives from what I’m experiencing.

How’s it going?

The past few days haven’t been easy. I’ve found myself standing in my kitchen holding a bag of tortilla chips and teetering on the edge of, I am going to eat all of these. I’ve been able to (mostly) talk myself down from these moments by addressing how I really feel… but each and every time, I get this itchy, uncomfortable feeling about it. Feeling emotions, really feeling them, makes us all uncomfortable to some extent. Feeling sad, being angry, experiencing grief… they aren’t good feelings and we don’t like it. So if we can avoid it, why not?

I should probably confess something right now: I’m a cry-er. I cry a lot. Probably at least 40% of the time. I cry when I’m angry, when I’m hurt, when I’m frustrated, when I feel ignored, when someone is mean, when I’m annoyed, when I’m stressed… pretty much if it doesn’t make me happy, I cry about it. And sometimes I even cry when I’m happy. I’m a cry-er. It’s what I do.

And I’m an ugly cry-er, guys. Really. It makes my face muscles tense and hurt. My head starts to pound. My nose runs and I talk like I have an extremely bad cold. Crying sucks, but I do it all the time.

Sometimes, when I’m right on the edge of tears, I eat instead. Because I hate crying, even though I do it all the time. But there is another side to my crying habit. Sometimes when I cry, I don’t eat. Sometimes, when I really let myself feel things, when I cry for a few hours like my body wants to, I don’t eat. I’ll feel hungry. But I’ll be so sad, and my head and face will hurt from crying so much, that I don’t have the energy to eat. So what’s better: compulsively eating so I don’t feel the emotion… or feeling the emotion and being so drained from it that I don’t eat?

Girls, this stress eating thing is getting complicated.

So… what’s working?

Cardio recently has not been doing it for me when it comes to exercising the stress away. I still feel good when I get off the treadmill or the elliptical machine, but at the same time, twenty minutes later, I still have the feeling of missing my boyfriend or stressing about the fact that there are, literally, no young professional job opportunities in my area (for people with my training and degree). So what has been working? Circuit training. Strangely enough, doing a series of crunches, leg lifts, high knees and long jumps clears my brain in a way that cardio used to, and afterward, the burn in my muscles is almost cathartic. Plus, if I keep this up, I’ll have some amazing abs. So if you’re finding cardio a little humdrum, give yourself a break and try some circuit training.

Finding a new hobby has also helped me a lot. When I don’t have anything to do (and, frankly, without a job and with my boyfriend in a different state, my options for things to do are pretty limited), I tend to obsess over little things, get stressed, and then eat. I promised my boyfriend that I’d find “little projects” for myself every single day. This week, I received a Canon Rebel T2i in the mail… and haven’t been able to put it down. When my part-time writing work gets done by 2pm, I now have something to do: I go for a walk with my camera and my dog; I visit my favorite spots around my hometown; or I go for a long drive, just me and my camera. Having a hobby distracts me and lightens my mood, especially when I’m having a bad day. I’m not saying you should drop $1,000 on a new camera or any kind of new hobby… but picking up scrapbooking, sewing or sketching is a great way to fill up the times where you would obsess over the little anxieties and stress eat.

Final Thoughts

This challenge has given me a lot to think about. Whenever I’ve been stressed lately, and found myself holding a jar of Nutella or some other tasty snack when I’m not really hungry, I’ve made a few notes in my journal and then calmly talked myself out of making a chocolate chip cookie sandwich with Nutella. All of these notes have essentially added up to the question I started this article with: what is it about feeling emotions that I hate?

Is it that I’m a cry-er? And an ugly crier at that? Because I give myself headaches from crying? Or is it because I don’t want to address what I really, really feel? As an example: when I’m frustrated with my boyfriend for not texting me back, what am I really thinking? Does he not love me? Is he with another girl? Is he ignoring me? It’s all based in insecurity, which fuels my stress, which fuels my stress eating, which fuels my insecurity. So really, when I stress eat to not feel emotion, what I’m really avoiding is addressing the underlying issue: that I’m insecure.

It can be a never-ending cycle, girls. But it’s time with break it. When I think about it, my stress eating always goes back to my little list of insecurities: the things that I’m unsure of regarding my body, my personality, my entire life. My insecurity over my not-so-flat stomach, my insecurity over the job market, my insecurity over the fact that maybe I’m not a likeable person… all of these things add up to anxiety that I pretend is about other things. But it’s not. It’s time to address the insecurity we all feel, so we can break the cycle of stress eating.


Four Easy Tips to Help You Stay Awake at Work

School’s out for summer and the time of sun, relaxation and road trips has arrived. But chances are, like me, you also have a summer job or internship that requires you to spend long hours sitting at a desk. Even if you’ve gotten a good night’s sleep, a day of nothing but sitting can leave you feeling groggy and drowsy. And as every college girl knows, relying on coffee to wake you up can turn you into a jittery mess. It also adds up, because most of us buy our coffee much more often than we make it. So, in honor of all you working girls, here are a few tips to keep you feeling awake and energized throughout the day – whether you’re in a classroom or a cubicle.

1.     Start your day with movement and keep it going. When you first wake up, your body has been inactive for hours. If you roll out of bed, drag yourself to work and then sit for the whole day, it will take you a long time to fully wake up. So, when you get up in the morning, get out of bed and move! Jump up and down, or if you’re really ambitious, drop down and do a few push-ups or crunches. This seems like the last thing you’d want to do when your alarm has just gone off, but it works. Activating your muscles will cause blood to flow into them. This increased blood circulation will energize you from head to toe.

Move as much as possible throughout the day. Obviously, some work environments will allow more opportunities for this than others. Any chance you have to stand up and walk around, take it. Do you have a dog or a cat? If so, you’ve surely noticed how often they indulge in a nice stretch. Take a page out of your pet’s book! Stretching increases circulation, too. Stand up and reach your arms to the ceiling, like you do when you’ve just woken up. Or, as Lil Jon would say, bend over to the front and touch your toes! (Just not when any creepy coworkers can see you – this one might have to wait for lunch or bathroom breaks.)

Living in South Florida means I’ve seen my fair share of beach-goers. The beaches down here are filled with beautiful people with beautiful bodies and perfect tans. However, they aren’t always filled with people who are easy on the eyes. Nor is every beach day an episode of Baywatch. Saturday Read: Beauty Queens by Libba Bray + Interview!

I was totally honored to interview Libba Bray this week about her new book, Beauty Queens. Check out the hilarious interview and review at the bottom!

Alex: So what was the inspiration behind Beauty Queens?

Libba: Well it was kind of funny because it was different than anything I’ve written before in that . David Levithan who is an amazing author and also an editor at Scholastic is a really good friend of mine and year’s ago he called me up and said, “I have this crazy idea for a book, but I think you should write it. Let’s talk about it over lunch.” Well, pretty much the minute you mention food, I’m so there. Because I’m really that easy. So, I was like, you’re going to buy me a burrito? I’m yours! So we went and had lunch and he said, “Okay, here’s the pitch: a plane-load of teen beauty queens crash on an island. What can you do with that?” And I thought, oh my god, I would kill to write that book! But I was under contract to write two more books and had other things to do, so I put it aside for a few years. In the meantime, I became aware of a lot of misagonistic things in our culture. One day I was at the 7-11, where all my great ideas come, waiting for the icey machine and I saw the tabloid stories. I saw that every single cover had something like “Is so-and-so dating so-and-so?” or “Angelina’s beauty secrets and perfect body two weeks after baby!” There wasn’t one with “Beyonce is at the top of the Forbes list and makes awesome new record”. It was all that reductive stuff. And I thought, why is this going on now? What is happening at this moment in time that is so limiting for women? So I wanted to explore that. And  I wanted to explore what it is to grow up female in this society.

A: So you’re tackling women growing up in this superficial kind of world?

L: Even more than that. It’s also about the ways in which we passively accept limitations that are put on women. Because sometimes it’s so superficial. Women are judged on how they look; it’s their currency. But it’s also all the subtle messages that are directed at us, say from the beauty industry. I always say you need to follow the economics of it. There are corporations that make billions of dollars off of women and they have a vested interest in you staying insecure. And listen, I love me some lipstick. You will pry my MAC Viva Glam Lipstick  from my cold, dead hands. If you ever really deconstruct those messages like “Is your skin looking tired?”or “Cellulite got you down?”, you see it just feeds on itself. And they start to get to worry about things you never even thought to worry about! Do I have cellulite on my knees?! I don’t know – now I’m paranoid! They make money off of that because they can sell you a product. You can buy them anyways, but it’s just about being aware of that. And there’s the deeper stuff to be aware of. Having our rights taken away – that’s something to really be aware of. It’s really important to be aware of what’s going on in politics and disagree and fight back. It’s everything from the superficial and insidious to the really important stuff. You may want to be aware of all these things and then make your decisions.

A: If you were stranded on a desert island like the heroines in Beauty Queens, what 3 things would you bring?

L: Clearly, some snacks and some water because I really like my snacks and I don’t want to die of dehydration. My joke is that I live in New York City and I’m so used to calling someone to bring me burrito, so I would spend the first two days on the island punching imaginary numbers into a tree phone asking, “Hi, what’s your delivery zone?” Toilet paper – just saying. And then a boat-building manual so I could get myself off that island as fast as possible. I’m not sure I’d survive, I’d probably be giant snake food.

A: Wow the boat-building manual is a good idea. No one ever says that!

L: I can barely put together an Ikea chair so it might no be a very sea-worthy craft, but I could try!

A: Which of the Miss Teen Dreamers is your favourite and why?

L: I loved writing all of them, but the character that surprised me the most was probably Miss Texas, Taylor Renee Krystal Hawkins. In a way I fell victim to my own trap. People have pre-conceived notions about these girls and I wanted to start with sterotypes and then subvert them. So I let you think what you wanted and then midway through, whoa, you’re wrong! There’s more to this girl. But she was the one who surprised me the most, especially when I figured out her backstory. She has a lot of interesting vulnerabilities about her and also, she kicks some serious butt. That was really fun to write.

A: Did you find yourself laughing out loud writing Beauty Queens? Seriously, lines like “ his most trusted advisor is a taxidermied former pet named General Good Times”! Where does that come from!?

L: I’m really that weird. Someone who read my last book, Going Bovine, was like where did you come up with that? And that was my answer – I’m really that weird. Sometimes I don’t think I’m that weird and people let me know that, no, no you ARE that weird. That’s how my brain works. Like what is he has a stuff lemur named General Good Times and he has Silent Killah written on his pyjamas! And then everybody kind of moves away from me and won’t let me have anymore sugar.

A: Well I loved Going Bovine!

L: Thank you! See, you wouldn’t take the sugar away from me, would you, Alex?! Growing up on an awful lot of Monty Python and Mad Magazine and Mel Brooks had a part.

A: What would your talent be if you were to compete in a pageant?

L: Oh my gosh! I feel like I should have a ridiculous talent! Oh man, that is such a good question and you would think I would have thought about that! I know – I can sing an ABBA medley! It might not be a good talent, but I would go down trying.

A: Would you have a nice disco outfit on?

L: Oh for sure! I can see the white fringe already, Fernando. SOS Dancing Queen! And some serious platforms too. And lots of dramatic posing.

A: I think you would blow the judges away!

L: Or they might try to medicate me before the Top 10.

A: When did you know that you wanted to be a writer?

L: There was a very serious moment actually. I had no idea that I was going to be a writer, even thought I was writing through my childhood and adolescence. I just never thought about it. And then, when I was 18, I had a really serious car accident. I demolished my face, I had to have to kind of re-built over a period of years. And I lost my left eye. This was the summer before I went to college, so a particularly sucky time to have this happen. My first year of college was the worst year of my life. I had some surgery done, but I felt broken on the inside as well as the outside. It was a really awful, rough year. As a graduation gift from high school, someone had given me this little, yellow journal. And I began to write down everything. It was sort of my lifeline. Everything that I felt I couldn’t say out loud, all those thoughts of feelings were written down. And it saved me. I say it with all sincerity that I know writing can save your life because it saved mine. That was it! At first, it was a way to stay alive and then eventually it became pretty empowering. I enjoyed the writing for it’s own sake and looked forward to writing in that journal. Then I started thinking that I kind of liked it. That was the beginning. I transferred to the University of Texas, down in Austin and a friend of mine asked me to write a monologue for a show that he was doing. I did and he said it was really good and asked if I had ever thought about writing a whole play. So that was what sparked it and made it happen.

A: You won the Printz Award for one of my favourite books, Going Bovine. How did that feel? Was that your “I made it” moment?

L: I don’t think there’s ever an “I made it” moment because there’s always another book. And every time you sit down to write that book it’s like “Wait! I don’t know how to write a book! You can’t make me do this!” And it was such an amazing feeling. I was so blown away and so surprised. Part of it is that I always wrote these really weird things and to have the weirdest thing I ever wrote and have someone say, “We really like this book and we get it” was such an amazing moment. I really am so grateful to the Printz committee. And then you know what? The next day I had to get up and start working on the next book.

A: What’s your favorite book? Like all-time, forever and ever.

L: Oh! That’s so hard! You’re cruel! Maybe Charlotte’s Web. If it was just an adult book I would pick The Hotel Newhampshire by John Irving. But you know, there’s something about that book that you read as a child. I read it on my own when I was like 8 maybe and I felt like I entered that world so completely that I felt like I was Fern and I was Wilbur and I was Charlotte. And I sobbed at the end! It took me somewhere. It did all those things that great books do. It was transformative.

A: We are College Candy, do you have any advice for college-age women?

L: I was such a mess at that age so you can’t possibly be more of a mess than I was! Getting back to what this book is about, it’s important to figure out who you are and that’s a lifelong process that’s hard work. But it’s ultimately rewarding! It’s good to just be aware of the messages we’re pummeled with all the time and see if you can kind of step outside of that. I always say that the hardest question for girls and women to ask themselves, because we’re not trained to ask this, is, “What do I want?”. We’re trained to think about what we want after we’ve satisfied everyone else’s expectations or think about what we can have. It’s absolutely fine and good to ask yourself what you want and go for it. It’s so easy to talk yourself out of going for it, but you know what man? Go for it! Why not? That’s one of those things in the “Do-over” column. If I could go back and just say to myself, “That guy – he’s an asshole” or “This person’s wrong” and to just stay the course. Go for what you want, ask for what you want. And if somebody says no, keep going until you find someone who says yes! Or make whatever adjustments you need to make. It’s so easy for us to back off. Don’t be obnoxious; don’t come in and say, “Give me what I want or I will fire-bomb your house!” but just keep going.

A: What are you working on now? Can you give us any hints?

L: I can! I’m working on the first book of a 4-book series called The Diviners. It’s a supernatural historical set in 1920’s New York. So full of flappers and jazz and things that go bump in the night. I say it’s sort of like F. Scott Fitzgerald meets The X-Files. There’s my pitch! And of course, when I sat down to write it I felt like I had no idea what I was doing. I was like, “Are you sure I’ve written 5 books?! Really?!” I tell you, these words, they’re not cooperating. Somehow it will make a book-shaped object at some point.

Libba Bray is a literary goddess. Seriously, I cannot believe the breath of this women’s YA work! She jumped on the scene with the supernatural fiction that is A Great and Terrible Beauty (and it’s 2 sequels), then blew me away with Going Bovine (see the review here) and is now back with a hilarious romp, Beauty Queens.

Beauty Queens is a satire. As in, super duper sarcastic. The story begins when a plane of teen beauty pageant contestants (aka the Miss Teen Dreamers) crash land on a desert island. The book follows their hilarious adventures as they try to survive, all while maintaining perfect pageant poise. However, there is a second story-line at work involving a secret government arms mission!

While the story of Beauty Queens is certainly a unique and interesting one, it’s really the humor that gets you and makes this book worth the read. I read this book on the deck of my boyfriend’s cottage and was absolutely embarrassing. Snorting away, my stomach hurt from laughing so hard! Libba’s sense of humor is demented (in a VERY good way) and I couldn’t believe the material that she came up with. And the book has a strong message of feminism while being beyond funny. It tackles some tough themes and really shows you that beauty is more than skin deep, highlighting how difficult it is to live as a female in our society. While this book is marketed as a comedy, it’s an important social commentary as well!

Beauty Queens is a great summer read. Not only will it provide pure entertainment, it sends a good message and will make you think critically about all the media that’s constantly pushed in your direction. I highly recommend it!


6 Must-Have Items to Update Your Wardrobe for Summer

Although it’s not officially summer yet, I think it’s safe to say the hottest season of the year is in full swing. Now that the warm weather calls for a change in fashion, it’s time to update your summer wardrobe. Of course, this doesn’t mean you have to spend tons of money on a closet full of new clothes.
