Mint Chip Ice Cream Pie [Intro to Cooking]

Cakes and pies never go out of style. While freshly baked, hot pies might be ideal for the upcoming winter months, we’ve still got a little bit of time left to appreciate a chilled ice cream pie. Let’s get real. We know white supposedly doesn’t fly after Labor Day, but no one said anything about having to retire your love of ice cream!
I know, I know, you can go out and BUY one of these very easily, but come on, don’t you want the satisfaction of saying, “Oh, this? I made it myself!” I know you do. Well, now you have that chance: a quick, easy, simple mint chip ice cream pie, made with a unique, delicious crust! Don’t like mint chip ice cream, don’t worry, you can make it with whatever flavor you’d like. You can even try it with froyo! Enjoy!
What you’ll need:
- 8 ounces chopped semi-sweet chocolate (melted)
- 4 cups crisped rice cereal (such as Rice Krispies)
- 2 pints mint chocolate-chip ice cream, slightly softened (or whatever flavor your heart desires)
How to make it:
First, grab a large bowl and combine the chocolate and cereal until the cereal is completely coated. Then, transfer to a 9-inch springform pan where you’ll press the mixture into the bottom and 1 inch up the sides of the pan. Then, freeze just until firm, only 5 to 10 minutes. Spread the ice cream in the prepared crust and freeze, covered, until firm, for at least 2 hours and up to 3 days. Then, there you go! Delicious!
