I know it’s only February (well, almost March), but it’s time to start thinking about getting fit for summer. Gone will be the days of hearty soups and chunky-knit sweaters. We’re entering ice cream sundae and crop top territory! Except those two things don’t exactly go together, do they? One of the saddest realizations of my adult life was when I had to admit to myself that I could not eat 100 ice pops, drink all the frozen margaritas, nom on some delicious barbeque and still look amazing in a bikini. It’s just never gonna happen.
That said, I really don’t have the willpower to turn down summer treats while everyone else is indulging, especially if I’ve been busting my butt in the gym; at that point I’ve earned the right to break the rules. Today I came across a recipe on Pinterest for “healthy” ice cream sandwiches. I loved the fact that someone thought to freeze CoolWhip as a sort of faux ice cream — I’ve been doing that for years with delicious results. But this blogger took it a step further by incorporating chocolate graham crackers and peanut butter to make one finger lickin’ ice cream sandwich.
As many peanut butter fanatics know, it’s not exactly the healthiest spread, especially if you’re glomming it on some graham crackers. I thought an even healthier twist on this great idea would be to mix fresh or frozen berries into your CoolWhip while it’s still whippy. Then place a dollop of that mixture on some low fat graham crackers, then slide your creation into the freezer until it’s all firm.
You can even mix things up by making some banana ice cream (simply freeze a banana and then plop it into a food processor to get it all creamy) and sandwiching it between graham crackers, too.
