Intro to Cooking: Lemon-Blueberry Pie

blueberrypie-intro

I’ll let you in on a not-so-small secret: I love pie. Like borderline-unhealthy-obsession-with-pie syndrome. Like if a recipe looks delicious and simple I will think to myself “Hmm, Kari, how can this translate into pie form?” (Which, I should warn you, doesn’t work with everything…like margaritas.)

So, pie obsession in mind, I was strolling the produce section last Sunday and stumbled upon super ripe, super cheap summer blueberries and, well, the rest is history. This recipe is delicious and somewhat nutritious (seriously people, pie is still pie, even if I sub sugar for Truvia), and the best part? Incredibly easy. Some might even say easy…as pie. Intro To Cooking: Peanut Butter Cup Cookies

pb cup cookies

You know those people who screw up the brownies where all you have to do is add water? Yes, that’s me. I have screwed up popcorn, switched ingredient amounts, and frequently embarrassed my mother with my basic lack of culinary skill. However, one summer’s night when my sister and I had nothing to do I typed in “Cookie Recipes” to Google. After sifting through ladybug cookies, frosting cookies, and every variation of chocolate chip that you can imagine, I finally came across the god of all cookies:

The Peanut Butter Cup Cookie.

Taken from allrecipes.com, this cookie is not only easy to make, it is nearly impossible to screw up. The first time I made them I was ecstatic; the second time I made them, I had everyone at my aunt’s Father’s Day party telling me what a gem I was and how lucky it was that I had inherited my aunt’s natural cooking abilities. I don’t think I’ve ever been so proud of myself. To all of the peanut butter lovers out there who want to make something sweet, try these. I promise, you won’t be disappointed. Besides being easy to make, they’re totally fun, and taste…well, like heaven melting in your mouth. Read More »

The End of Winter To-Do List

sledding.jpgThe countdown to spring has began. Soon enough we will be breaking out the sun-dresses and flip flops, pouring lemonade and flipping burgers. But as I cross out the days on my calendar (15 more to go) I can’t help but wonder if I’ve made the most of my winter.

Of course I’ve trekked through the snow on my way to class, stayed in bed for days on end and silently cursed the snow plows that prevented a well deserved snow day, but did I really enjoy winter? With February already behind us I’m left with a laundry list of to-dos before winter is gone for another whole year.

In case anyone else is in the same predicament, I have the top ten things everyone should do before winter comes to a screeching halt.

1. Cafeteria tray sledding. “Borrow” some trays, grab five of your friends and head over to the hill behind the dorms before all that snow turns to a slushy mess.

2. Mix peppermint schnapps and Cocoa. It’s the perfect complement to sledding. Just remember, kids: wrap up the celebration with this warm concoction. I learned the hard way that the liquor and sledding combo don’t end well.

3. Bake cookies (or just eat all the dough). Read More »

Blame It On The Rain: Alternate Activities for A Rainy Day

Nothing can put a damper on those sunbathing plans like a summer rainstorm. But never fear; there are still options out there to have some good ol’ fashioned summer fun.

Go to the movies: Summer is the season of blockbusters, so when the rain comes pourin’ down, head into your local mutliplex, grab some popcorn, Milk Duds and indulge in some heavy caloric intake and a couple hours of mindless entertainment. It might not be the best thing for your bikini bod, but a lil’ indulgence never hurt anyone.

Get lost in the bookstore: Being stuck inside is a great opportunity to get caught up on your reading and to check out that new bestseller you’ve been hearing about, or an old classic you haven’t picked up since your days in high school Lit. Plant yourself in your nearest Barnes & Noble or Borders, grab an iced latte and read away.

Check out a museum: Many cities have great museums, and not just of the artsy genre. Check out what you have in your area. Chances are, you can find a museum chronicling the history of all kinds of interesting topics; aerospace, film, maybe even sex. Whatever floats your boat. Take the chance to soak in some educational information; it is a lot healthier than soaking in the rays. Read More »

It doesn’t really matter what type of muffins they are—I’ll eat any flavor.

I’ll eat muffins with nuts, with berries, with chocolate chips…you can even put carrot and zucchini in there, I won’t mind.
