Maintaining a healthy diet and working out obviously has beneficial effects for our body and well-being. But need another reason to trade in the fries for some fruits and vegetables? Need extra motivation to get yourself to the gym?

It’s that time of year again: cold season.
Ew.
I’ve been noticing more people sneezing, which is why sanitizer is my new BFF. Unfortunately, thanks to all the common surfaces in college – computers, desks, ice luges – no matter how hard we all try we are gonna catch a cold. Pretty much everybody does. Even if they can avoid the germy keyboards and doorknobs on campus, the change in weather usually has them sniffling before too long.
But I have the cure for what ails us all: the best chicken soup EVER. Don’t use that canned stuff; the time and effort to make this soup is totally worth it. It will fill you up and make you feel all warm and toasty inside, no matter how chilly and snowy it is outside. Read More »

Moving is one of those experiences that forces you to look at what quantifies your existence in the real world. As I box up books and birthday cards, clothing and toiletries, it occurs to me that my possessions are ideal for a nomadic lifestyle.
Aside from my bed, I could pick up and go at any time to start over in another overpriced, undersized apartment. This feeling is surprisingly liberating in the “world is my oyster” sense. Wee! I can go anywhere! My options are limitless, budgeting excluded!
After rigorously going through my wardrobe and neatening my bedroom, I took stock of my kitchen. I really have nothing to take with me, save for my toaster oven, which was a birthday gift from my roommate and is my favorite appliance of all time. As I lovingly patted the top of it, assuring her that her new home would offer her counter space, I thought how much easier takeout is than cooking. Food out is so much better. Food at home is so… bland.
Why? Because spices are freaking expensive and salt and pepper can only do so much. But really, overall, I could save tons of money if I would stop getting delivery and started grocery shopping. When I was little, I used to hate goat cheese. It tasted so, for lack of a better word, weird. Now that I have a wider culinary palette and more sophisticated tastes (or so I hope), I try to incorporate goat cheese into more of my cooking.
In this pasta, the goat cheese flavor isn’t overwhelming, but it does make the dish nice and creamy and give it a unique taste.
To make enough pasta for two, you’ll need one baby eggplant, about 2 tablespoons of olive oil, one small onion, one large non-green bell pepper (or two small ones), two garlic cloves, 3 tablespoons of fresh basil or ½ teaspoon dried, ¼ teaspoon salt, ¼ teaspoon pepper, enough pasta for two, 1/3 cup dry white wine (optional), and 2 ounces of fresh goat cheese.
First things first: heat the oven to 375, and peel the baby eggplant. Slice it into ¼” half-moons. Rub the eggplant pieces with half the olive oil, and place them on a baking sheet. Bake 10-15 minutes, turn them over, then bake 10-15 more minutes. Read More »
