College life isn’t kind to the carnivore. Meat is often expensive and time-consuming to cook, not to mention extremely perishable, and the Mystery Meat served in the caf won’t exactly sate a craving for prime rib. So what’s a girl gotta do for some quick, cheap, protein? Short of settling for cold cuts, which could possibly shorten your life and are very high in sodium, why not take a page out of the vegetarian handbook and opt for filling, delicious chickpeas?
This Week’s Ingredient: Chickpeas
Chickpeas, or garbanzo beans, are often very low in price and are great to have in the pantry as they keep very well. They have a wonderfully nutty, smooth flavor and are the primary ingredient in hummus. (Editor’s Note: Mmmmmmm hummus.) In addition to being a great source of fiber (which keeps you fuller for longer), chickpeas are high in molybdenum, a mineral necessary for the production of the enzyme sulfite oxidase, which breaks down sulfites–preservatives found in deli meats. Oh yeah, and they’re a lean source of protein, with 15 grams per cup.
Easy meals:
1. Toss over a salad for extra protein and flavor.
2. Roast for 35 mins at 350 degrees in a pan with diced eggplant, curry powder, tumeric, and pepper for a spicy, hearty, low-calorie side dish.
3. Mix with black- and kidney beans, basil, olive oil, and feta cheese for a light three-bean salad.

I am horrible when it comes to eating, and my metabolism is probably waiting until I’m thirty to get its revenge in the form of cellulite and love handles. I skip meals all the time, and have been known to go days without food.
No, I don’t have an eating disorder. I have a working disorder—I’m a total workaholic.
When I do eat, it needs to be healthy and somewhat portable. I’ve considered trying Atkins or Southbeach protein bars, Power Bars, or even Slim Fast Shakes as a snack I can pound in the car on my way to work. But, honestly, I can’t justify consuming 400 calories in the form of a little bitty rice bar that is not going to quiet my growling stomach, or 13 grams of fat in a similarly unsatisfying wannabe-milkshake concoction.
Instead, I live off of caffeine.
One morning, before work, I stopped at my favorite coffee shop to grab a skim milk, sugar-free vanilla latte, and saw a display of Vegan Energy Bars at the counter. I’m not vegan, but was hungry and I thought that those little heart-shaped bars might be crazy enough to work! I mean, the vegans are picky about what they put into their bodies and without meat or dairy, they still need nutrients, right?
I purchased a package of chocolate chip flavored (if it has chocolate it can’t be that bad), heart-shaped, soy-filled cakes of pure delight that day, and I’ve been hooked ever since. Read More »

I’m not a vegetarian, but I like to eat like one. I’m very picky with meats (I don’t eat seafood, beef, or pork); I try to eat healthy (even though I typically consume the calories I cut throughout the week in weekend drinking binges); and, most importantly, I’m a horrible cook, so I’d rather microwave a faux-chicken cutlet than get salmonella from undercooking a juicy piece of pollo.
A recent issue of Shape magazine suggested eating vegetarian once a week, and I was like, “Heyyy I already do that! I rock!” They also featured a mouthwatering recipe for vegetarian paella. That’s not going to happen. So, whether you’re a carnivore or a herbivore, trying to shave some calories from your diet, or too busy to slave over a hot stove, I give you vegetarian meals in five minutes or less. All you need is a microwave.
1. Boca Meatless Chili
You need:
–Boca Meatless Chili, from the freezer section of your grocery store.
–2 slices of whole wheat bread
*Zap the chili for three minutes, stir, and nuke for one more minute.
*While the chili is in the microwave, pop the whole wheat bread in the toaster.
*Cut the whole wheat toast in quarters, top with tasty chili, and enjoy! Read More »
