It sounds complicated, but I promise it’s not. Chicken and gnocchi soup is one of my favorites to make when I don’t have much time and I’m craving something that tastes homemade. Plus, this is a great soup to impress your friends with and it makes for great leftovers.
Did you know that people who eat soup for lunch tend to eat healthier for the rest of the day? They are less likely to snack or compulsively eat, and more likely to choose fruits and veggies over junk food. I think that’s pretty awesome, personally. And while this might not seem like a very summer-y recipe, it is great for a late supper during a summer thunder storm.

It’s that time of year again: cold season.
Ew.
I’ve been noticing more people sneezing, which is why sanitizer is my new BFF. Unfortunately, thanks to all the common surfaces in college – computers, desks, ice luges – no matter how hard we all try we are gonna catch a cold. Pretty much everybody does. Even if they can avoid the germy keyboards and doorknobs on campus, the change in weather usually has them sniffling before too long.
But I have the cure for what ails us all: the best chicken soup EVER. Don’t use that canned stuff; the time and effort to make this soup is totally worth it. It will fill you up and make you feel all warm and toasty inside, no matter how chilly and snowy it is outside. Read More »

I love Chicken Pot Pie. If it’s at all possible for words to have a taste, home tastes like creamy chicken and pie crust.
Chicken Pot Pie gets a bad rap for being kind of time consuming but there are some very easy short cuts to take to go from unpacking groceries to hot and ready pot pie in less than 50 minutes (45 if you’re a good chopper).
Ingredients:
1 Medium Yellow Onion
3 Carrots
3 Celery Stalks
1 Cup of Frozen Peas
1 TB Butter
1 Store-Bought Rotisserie Chicken
2 Cans of Cream of Chicken Soup (10 3/4 oz. Use A Name Brand)
1 Cup of Milk
1 Box of Roll-Out Pie Crusts
1 Egg

Remember when you were little and you came down with a cold? Mom or Dad would make you soup, tuck you into bed, and feed you medicine. Well, now you’re on your own, and chances are when you are hacking all over place even your best friend won’t want to get near you. What to do!?
First things first…if you wake up in the morning feeling like total crap, give yourself a sick day. We have a tendency to push ourselves to the limit in college, but remember: even big corporate offices give sick days, and that’s for a good reason. If you try to keep going like normal, chances are you’ll make yourself even more sick, thus forcing you to possibly miss even more time than if you just took it easy early on. Obviously if you have an important exam or test you may have to suck it up and go to class, but otherwise, just stay in bed.
Make sure to sleep in and get some extra rest–close the blinds and don’t turn on the TV (not yet, at least!). When you feel like you can’t sleep anymore, take a hot shower.
