There are some things that are so good they just shouldn’t be messed with. And there are some that, while absolutely delicious, can be made even more amazing with a few simple additions. Brownies fall into the latter category.
While everyone loves a good brownie, a brownie can be made exponentially better by adding peppermint (or peanut butter, caramel, marshmallow… the list goes on).
Mint chocolate brownies are the perfect treat as the weather gets colder, but really, they’re perfect for any time at all. Is there ever a bad time for a brownie? Read More »

Okay, now that you’re going back to school, it’s time to focus on the most important thing for having a good school day: breakfast.
No, seriously. Breakfast is delicious. I know a lot of college students skip breakfast to save time in the morning (I myself was often guilty of this), but why skip the most awesome meal of the day?
With this easy recipe, you can make 10 banana muffins at once–that’ll get you through 10 days, no muss, no fuss. Plus, you can eat ‘em on the go! And, hey, at least they have bananas.
And if you don’t eat breakfast, you’ll be starving later (low blood sugar, sugar) and quite possibly wolf down everything in sight. Not cute.
So munch away, my collegey friends. Remember, you can’t spell “breakfast” without “eat” (I mean…if you take out some letters in between…whatever, it’s muffins!!). Read More »

I am horrible when it comes to eating, and my metabolism is probably waiting until I’m thirty to get its revenge in the form of cellulite and love handles. I skip meals all the time, and have been known to go days without food.
No, I don’t have an eating disorder. I have a working disorder—I’m a total workaholic.
When I do eat, it needs to be healthy and somewhat portable. I’ve considered trying Atkins or Southbeach protein bars, Power Bars, or even Slim Fast Shakes as a snack I can pound in the car on my way to work. But, honestly, I can’t justify consuming 400 calories in the form of a little bitty rice bar that is not going to quiet my growling stomach, or 13 grams of fat in a similarly unsatisfying wannabe-milkshake concoction.
Instead, I live off of caffeine.
One morning, before work, I stopped at my favorite coffee shop to grab a skim milk, sugar-free vanilla latte, and saw a display of Vegan Energy Bars at the counter. I’m not vegan, but was hungry and I thought that those little heart-shaped bars might be crazy enough to work! I mean, the vegans are picky about what they put into their bodies and without meat or dairy, they still need nutrients, right?
I purchased a package of chocolate chip flavored (if it has chocolate it can’t be that bad), heart-shaped, soy-filled cakes of pure delight that day, and I’ve been hooked ever since. Read More »

When I was a little girl, I used to hear story after story about my grandma’s apple cake. Not apple pie, mind you–my grandma was from the Bronx, not frickin Kansas–but apple cake. Everyone was always carrying on about how delicious and how light it was, and my grandma would smile and throw her hands in the air and say, “Someday, maybe I’ll make it again.”
Well, she didn’t. I never got to taste this mythical culinary delight. However, I often wondered if my grandma, who was a bright and feisty little thing, if she was tricking them into remembering it more fondly than they would have if she’d kept making it.
I’ve never been able to track down my grandma’s recipe, but I was able to find something comparable–and I gotta tell you, for cake, it’s amazingly low-fat. It’s also amazingly delicious.
So, have at ye, apple cake lovers! Make my grandma proud! (Eat, eat, you’re all skin and bones!)
Not Quite My Grandma’s Apple Cake
(serves 10)
Stuff That Goes In It
2 1/2 cups of chopped, cored apples
2/3 cups of packed brown sugar
1 cup of flour
1 cup of whole wheat flour Read More »

You make a lot of mac and cheese. Right? Don’t lie. I’m onto you.
The thing is, you could very easy (and for much less money than going out to eat) make a much more enjoyable and fine-dining form of carby goodness: pasta with scallops.
This is a particularly good dish for entertaining. Also, did I mention it’s delicious? Well, it’s delicious.
Now get cracking:
Stuff You’ll Need
-1 pound of the pasta of your choice (but NOT something individual like bowties or elbows)
-1 1/2 pounds of scallops
-3/4 cups of butter
-3 shallots
-2 cups of a dry white wine (perhaps a Pinot Grigio?) Read More »

It was hot the other day. I mean, really hot. Like, 94 degrees hot. But, unfortunately, it takes more than an unseasonable heat wave to make my sweet tooth dissipate.
I had planned earlier in the day to bake cookies, but the thought of turning on the oven in the heat made me feel like I was going to melt on the spot. And then, suddenly, I had a dessert altering memory:
When I was a wee brownie in my second year of the Girl Scouts, I went on a camping trip. After roasting the requisite marshmallows, my girl scout leader whipped out a little surprise: we were going to make icebox cake.
The dopey bunch of us gathered around and put together this seeming mishmash and then, the next morning, we were munching on one of the most delicious desserts we’d ever had.
When I once again made icebox cake the other day, I was pleased to discover that the dessert is every bit as delicious as I remembered it–and every bit as easy. In fact, it’s easier–as Girl Scouts, we made it by leaving it outside overnight in the winter. Now you can use–gasp!–a refrigerator!
Here is the (very easy) recipe. Enjoy! Read More »
