<p>Say <em>whaaaat</em>? Look, my <a href="http://www.menshealth.com/mhlists/Marketing-Scams/100-Calorie_Snack_Packs.php">&#8220;healthy&#8221; snacks</a> barely make it under a hundred calories. How in the world can my dinner top that?</p>
<p>Introducing one of my absolute favorite foods &#8211; spaghetti squash. Now, this gourd was introduced to me about a year ago, but I never actually bought into it. I thought it was just another one of those healthy food items that tasted really bland and would just be a phase. Boy, was I wrong!</p>
<p>It&#8217;s called spaghetti squash because it is the perfect substitute for pasta. It has a medium-heavy texture that looks like spaghetti and tastes a little sweet. Want to know the best part? Here are the nutrition facts for one cup of this delicious squash:</p>
<p><strong> 42 calories, 0g fat, 10g carbs, 2g fiber, and 1g protein</strong></p>
<p>Ummm, amazing! <strong></strong>It tastes great paired with marinara sauce and turkey meatballs. Due to my crazy work out schedule, I have to eat more than one cup (which is a huge splurge, I know) but it&#8217;s so fulfilling. If you ever have a food cheat day, this will easily put you back on track.</p>
<p>I&#8217;m not a homemaker, so anything that involves lots of preparing and waiting is not my thing. Fortunately, it&#8217;s super easy to make this.<strong> Here&#8217;s the quick and easy!</strong></p>
<p><strong>1. Purchase spaghetti squash.</strong> It&#8217;s only $2.99 at Trader Joe&#8217;s and I think it turns out to be a similar price at other supermarkets.</p>

<p><strong>2. Cut the squash</strong> in half or poke 10 holes in it. If you can get it to cut open, it will look like a pumpkin inside. Simply pull out all of the seeds.</p>
<p><strong>3. MICROWAVE it!</strong> I know, right? It&#8217;s like making cup of noodles. Microwave the whole squash on high for about 15-17 minutes (depending on how big the squash is). You can also steam or bake it, but it takes much longer.</p>
<p>4. Take it out of the microwave. <strong>Use a fork to scrape the inside of the squash.</strong> It will come out in strands, just like spaghetti! So fun. It&#8217;ll be extremely hot, so just be careful.</p>

<p>Romance?  No.<br />
Chocolate?  No again.<br />
Flowers?  Absolutely not.</p>
<p>Traditionally, Valentine’s Day is about spending two weeks trying to find the perfect gift for your boyfriend or girlfriend and often failing miserably. Then spending another two weeks talking about said failure with your friends. It&#8217;s exhausting and its not what should be occupying your time.</p>
<p>This year, instead of you and your partner both exerting your energy worrying about getting each other the “perfect gift,” why not focus on gifts you can share together? It takes the stress off of your shoulders and brings the focus back to what this holiday is really about: spending time with the one you luuuurve.</p>
<p><strong>Sexy Lingerie.</strong> While possibly a little bit cliché, this gift will <em>always</em> work (especially when you bust it out again in March, April&#8230;you get the point).  <em>You</em> get to look really hot in some expensive Victoria’s Secret get-up and <em>he</em> gets to get hot when he sees you. Then you both get to enjoy what happens next. And again in the morning.</p>
<p><strong>Weekend Getaway. </strong>If you’ve been dating for a long time and you want to do something ultra romantic, plan a weekend trip to a bed-and breakfast.  Spend the days wandering in and out of shops in the cozy little town and the nights snuggling in your quaint little room. If that&#8217;s too much to plan, booking a nice hotel in your college town for the night is a cheaper and easier alternative. It may not seem like much, but it&#8217;s amazing what a clean room without roommates can do.<span id="more-52605"></span></p>
<p><strong>Concert Tickets.</strong> If candy and chocolate is not your thing, check out who’s playing around town and split a pair of tickets with your man.  If that sounds too pricey, you can also always look up an open mic night or a café concert for something different, intimate and special.</p>
<p><strong>A Date Day.</strong> Instead of doing gifts, plan an over-the-top date! Get breakfast together, come home and watch a movie, feed each other chocolate, cook a meal together, spend the night together…anything that keeps the two of you together for the entire day.  Valentine’s Day is a great day to just be with the person you love (cheesy, but true) and just clearing your schedule for the other person can sometimes be enough.  So enjoy!</p>

Unfortunately, the two are almost mutually exclusive in my mind. I say “almost” because I can think of at least one notable exception: <em>taco salad</em>.</p>
<p>When I was a kid, taco salad was one of my favorite dinners. My mom would sprinkle some grated cheddar cheese on tortilla chips and pop them in the oven to make nachos, and we would eat the nachos as an appetizer while she made the taco salad. When we were done downing the nachos, the salad was ready to eat.</p>
<p>I love taco salad so much that sometimes I make the mistake of ordering it when I go out to eat. There’s nothing wrong with that—it’s usually pretty delicious—but then I remember that I can make almost exactly the same thing at home for a fraction of the cost. If you like restaurant taco salad, too, give this recipe a try.<span id="more-8063"></span></p>
<p>For two people (or some leftovers for when you&#8217;re starving post-study session), you’ll need about 3 cups of tortilla chips, half a head of lettuce, one chopped tomato, around 1/3 pound ground beef, ¼ cup chopped black olives, about 1/3 cup shredded cheddar cheese, and about ¼ cup of French dressing.</p>
<p>First, brown the ground beef in a pan.</p>

<p>While the beef is cooking, wash your head of lettuce and shred half of it into a big bowl. Chop the tomato and olives, and add them to the bowl. Pour in the chips and cheddar cheese.</p>
<p>When the beef is done cooking, drain off the grease. Add the beef to the bowl. Then pour in the French dressing—you may want more or less of it to taste, so start with less to make sure the flavor won’t overwhelm—and toss.</p>

Seven. Needless to say, she was the queen of easy recipes and delicious meals made from the leftover scraps of last night&#8217;s dinner.</p>
<p>Now, I&#8217;m pretty sure none of you people have 7 kids, but you <em>do</em> have a full course-load and weekends spent laying in bed watching TV. Yeah, you&#8217;re busy and there&#8217;s not much time to cook, which means my Nana&#8217;s recipes are perfect for your college life.</p>
<p>And the best/easiest/warms-your-tummy from-the-inside-out recipe: Nana&#8217;s Turkey Tetrazzini. It sounds fancy, and tastes fancy, but it&#8217;s super easy (got a bowl and a spoon? You&#8217;re good to go) and quick to make (open, pour, mix, cook). And it can be made vegetarian! Just take out the turkey.</p>
<p>Enjoy!</p>
<p><strong>Ingredients:</strong></p>
<p>2 Tbsp finely chopped onion<br />
2 Tbsp chopped celery<br />
2 Tbsp chopped black olives ( I put in lots more)<br />
1 and a half to 2 cups cooked turkey (or chicken!), cut in pieces<br />
8-12 oz cooked pasta, like spaghetti<br />
1 can cream of mushroom soup<br />
½ cup water or chicken broth<br />
¼ cup white wine or sherry, if desired (and who wouldn&#8217;t desire a little wine in their dinner&#8230;and the rest of the bottle while they make it?!)<br />
1/3 cup shredded cheddar cheese<br />
Bread crumbs for topping<span id="more-41894"></span></p>
<p><strong>Tetrazzini Time:</strong></p>
<p>1. Preheat oven to 350 degrees.</p>
<p>2. Cook onion and celery in microwave for 1 minute to soften.</p>
<p>3. Combine all ingredients except breadcrumbs (and save some cheese for the top) and pour into pre-greased baking dish.</p>
<p>4. Top with crumbs and cheese and bake for about 30 minutes, or until top looks brown and cheese is melty and gooey and, mmmm, so delicious.</p>
<p>5. Act like it took forever to make, tell no one your secret.</p>

<p>What do you do when you’re craving delicious, spicy quesadillas? Put down your car keys — there’s no need for Taco Bell (especially when you are sober&#8230;that stuff is nasty!). This awesome dinner for two is healthy, inexpensive and easy. No drive-thru required.<span id="more-32290"></span></p>
<p><strong>You’ll need:</strong></p>

<p>Whole wheat tortillas<br />
1 cup instant brown rice<br />
1 can black beans<br />
1 green pepper, chopped (or you can buy frozen, diced peppers to save time!)<br />
1 onion, chopped<br />
Corn (on the cob is in season, therefore inexpensive and delicious, right now)<br />
Organic salsa (or a chopped tomato)<br />
Mojo marinade/sauce (sold in bottles at the grocery store)<br />
6-8 oz. of chicken, marinated in the Mojo<br />
Cayenne pepper<br />
Black pepper<br />
Salt<br />
Your favorite toppings (lettuce, cheese, sour cream, guac, etc.,)</p>
<p><strong>How You Do It:</strong><br />
1. Fill a large pot with enough water to cover the corn, bring to a boil, then add corn.</p>

<p>2. In a deep skillet, sauté half the peppers and onion in canola oil spray, about 5 minutes or until they’re tender. Set aside about half of them, leave the other half in the pan.</p>
<p>3. Add the black beans (with sauce) and bring to a boil. Add rice and bring to a boil again, let it cook for about 5 minutes.</p>
<p>4. Cover the rice and beans, reduce heat to low.</p>
<p>5. For the chicken, the quickest way to cook it is on the grill or in a skillet on medium-high heat, for about 5 minutes on each side (just make sure the center isn’t pink). If you’re short on       time, you can use frozen, diced chicken and just cook it in some Mojo sauce to skip marinating it.</p>

6. Spray both sides of a tortilla with canola oil. Add toppings, chicken, peppers and onion, then fold in half.</p>

<p>7. Remove corn from water. Spread with half a tablespoon of butter and sprinkle with cayenne pepper.</p>
<p>8. Heat a small pan on medium heat, then add the tortilla with all the fixins&#8217;. Grill on both sides until it’s golden brown.</p>

But looking around at the misguided youths of today *ahem drinking buddies*, I’m starting to think that Miss Manners might have been onto something.</em></p>
<p><em>While you may never need to know how to greet a duke or how to tell which fork is REALLY the oyster fork, knowing how to deal with people whom owe you money, how much to tip, and how to address the ever annoying licorice-in-teeth conundrum without being rude might actually come in handy in the real world. I'm not trying to be your mother - oh goodness, no - I'm just here to help you out of those little etiquette dilemmas. So here goes: <a href="http://collegecandy.com/2009/04/08/miss-manners-house-guest-cheat-sheet/">a quick lesson in etiquette</a>. The sh*t you might actually need to know.] </em></p>
<p>These days, it seems like the etiquette rules of the past just can’t keep up with the changing face of communication. Now, I like my cell phone as much as the next person, but there are some things you just shouldn’t do with a phone…</p>
<p>- Having a cell phone lets you talk whenever, whereever, but that doesn’t mean you should. It’s rude to talk on the phone in restaurants, movie theaters, libraries, lecture halls, opera houses (does anyone actually go to those?), etc. Keep your phone on silent. Duh.</p>
<p>- What’s more, it’s rude to talk <em>loudly. </em>I don’t mean the “slightly-above-normal-speaking-level” loud. I mean the “STRAIGHT-UP-SCREAMIING-INTO-YOUR-PHONE-LIKE-IT’S-A-MEGA-PHONE“ loud. If you have to scream, take it somewhere private. Otherwise, realize that the other person will hear you whether you’re screaming or whispering (preferably, talking normally). Plus it makes you look super crazy if you’re walking down the street screaming into a hidden Bluetooth.<span id="more-31542"></span></p>
<p>- Ahh… Bluetooth. Useful for driving, useful when your hands are full, but not so useful for anything else. For goodness sakes, take it off your ear when you’re not on the phone. The thing is silly-looking and it’s completely unnerving to try and hold a conversation with someone who could be on the phone with someone else. Plus the blinking light is extremely distracting. Take it off.</p>
<p>- Loudspeakers are completely unnecessary (not to mention, obnoxious) in public. There’s no reason why anyone should have to listen to both ends of your conversation. Common decency, people.</p>
<p>- Yes, I know the Crackberrys, the iPhones, and the G1s are super addictive, but that doesn’t mean they should be permanently glued to your hand &#8211; or your ear! When you’re with someone, <em>be with them</em>. It’s rude to constantly text in the company of others (“Stop trying to be sneaky, I know what you’re up to. This isn’t high school, I can see you texting behind that menu.”) and even if you’re not texting, just fiddling with your phone makes the person talking to you think that you’d rather be somewhere else.</p>
<p>Maybe I’m selfish but when I’m with someone, I want them to focus on me. Not their email, not the playoff scores, not their online shopping. ME. Put the phone away (not on the dinner table next to the rolls, oh dear.) And if you absolutely MUST keep your phone on because you’re waiting on an important phone call, warn me first. I don’t want to be halfway through my pasta only to be interrupted by Daddy Yankee‘s “Gasolina.”</p>

			<content:encoded><![CDATA[<p><img class="alignright size-full wp-image-24446" title="couple_dinner" src="http://collegecandy.files.wordpress.com/2009/03/couple_dinner.jpg" alt="couple_dinner" width="283" height="283" />Every girl will go through a time in her life when she has to choose: eat dinner or buy a new little piece of fabulous.  We have all been (or are, or will be) so broke that the basic necessities of human life are juggled on a constantly shrinking stage of available funds.  I like to refer to it as my “starving artist” period, through which all writers, photographers, and other creative people must progress.  My parents like to refer to it as “get a job NOW.”</p>
<p>What is a girl supposed to do?  Let me share a relatively recent discovery of mine: you don’t necessarily need money to have a nice meal out.</p>
<p>I moved to New York City for an internship this month and subsequently have no money.  The first weekend I was here just happened to be my birthday (funny how that worked out), so I was obligated to spend lots of moolah&#8230;on myself.  Now I have even less money.  This is a HUGE PROBLEM in a city where every block is full of deliciousness and fun.</p>
<p>My solution?  First dates.</p>
<p>It’s not hard to find a guy to take you out on a first date.  First dates are easy &#8211; no pressure, no expectations, and all you have to do is chat pleasantly and eat delicious food (or see a cool movie, or whatever).  If you don’t want to take it beyond the first date, then you don’t have to. If you do, then more power to ya, sister (more free food ).</p>
<p>Either way, you both had a nice time and you got to try a new restaurant for free. Win/win.</p>
<p>Obviously, I realize it’s not very nice to use guys just for a free meal.  But hey, the way I see it, they’re getting the pleasure of my company and conversation and I’m not completely ruling out the possibility of a second date or even a relationship (one not entirely based on free food, that is). And I&#8217;ll pay it back eventually. You know, when I have a job and I&#8217;m making money and not dancing around my sublet when I find a dollar in a pair of jeans I haven&#8217;t worn in awhile&#8230;</p>
<p>In the meantime, though, that Korean restaurant down the street is looking de-LISH and I think that dishy Korean guy would be the perfect person to buy me dinner.</p>

<p>This past weekend, my bf invited me to have Easter dinner with his family. After already weaseling my way out of both Thanksgiving and Christmas dinner, I knew I was going to have to come up with a GOOD excuse this time. Unfortunately, he caught me off guard and I think I stammered something along the lines of “Er&#8230; can’t&#8230;. brother&#8230; stay home&#8230; babysit&#8230; sorry!” into the phone. His response? “Great! Bring him with you.” Crap. So in honor of my 2 hours of awkwardness (kidding!!! uh..sorta), here is how to manage:<span id="more-27215"></span></p>
<p>1. <strong>Milk your boyfriend.</strong><br />
[NO! Not like that! Put the udder down!] I meant for information. This is something I didn’t do but should have. It’s always good to know about his grandmother’s shopping addiction and his uncle’s super conservative political stance (“<em>Of course</em> I voted for McCain, Uncle Bob” *cough cough*) beforehand. Okay, so maybe you don’t have to get too personal with your digging (Great Aunt Ethel&#8217;s stomach issues), but always inquire about family traditions and taboo discussion topics before the meal. It helps to be prepared.</p>
<p>2.<strong> Greet each family member personally.</strong><br />
I know you want to suck up to his parents, but don’t forget the rest of the family. Be polite when introducing yourself and be prepared for anything from handshakes to hugs and kisses.</p>
<p>3. <strong>“Mr. and Mrs.”</strong><br />
I get it, we’re growing up. Even though Mr. and Mrs. Jones might feel more like Mike and Sue to you, greet them with respect and treat them as Mr. and Mrs. until they give you permission to refer to them otherwise.</p>
<p>4. <strong>Be prepared for 50,0000 questions</strong><br />
You’re the new girl and as such you will attract a crowd of curious family members like, well, a new girlfriend. Expect to be asked a million questions. Sample: “How long have you known blahblah?” “What are you majoring in?” “How old are you really?” “How many kids do you plan on having?” and “What are your intentions with my son?”</p>
<p>5. <strong>Stay out of family drama.</strong><br />
When drunken Uncle Bob gets into a heated argument with Grandpa about gay marriages, stay out of it. Your first meet-the-family function should definitely not be the time to seem disagreeable or garner enemies. If you must voice your opinion, make sure they know that you are well informed about the topic. Don’t get involved in age-old drama either. Smile and wait until the topic changes.</p>
<p>6. <strong>Bring a share-able gift</strong><br />
You certainly aren’t obliged to bring a gift, but if you do make sure it is something that can be enjoyed by everyone there. The clichéd bottle of wine will work just fine, but only if you are of legal drinking age (trust me, you don’t want to have to explain to his mom how you obtained the item in question. Plus it’ll make her wonder if you’re a drinker, which is never good.) If you’re a baker, bring desserts for everyone! Be creative. I love making chocolates, so I made a bunch of white chocolate candies for his family. So what if I chickened out and never took them out of my bag? It’s the thought that counts right?</p>
<p>7. <strong>Don’t drink&#8230;</strong><br />
Too much. Enough said.</p>
<p>Bottom line is, no matter how much you try to fight it, meeting the parents is pretty much inevitable. Just be yourself and when it’s all said and done, be grateful that you finally went through it &#8211; your man will find ways to thank you later.</p>

<p>There&#8217;s nothing better than walking into a restaurant or &#8211; yippee! &#8211; a bakery and taking in that hot-off-the-stove smell; the yummy aromas of fresh-baked goods fluttering into my nose and making my stomach growl with hunger. And then that moment when that delectable dish is sitting in front of me and I finally get the chance to dig in&#8230;</p>
<p>OMG I&#8217;m drooling.</p>
<p>There is <em>one </em>&#8220;type&#8221; of food that I&#8217;m not completely head-over-heels for, though, and that is the leftover.<span id="more-17328"></span></p>
<p><strong>Love:</strong></p>
<p>That giant bowl of fettucine you had with your parents (and on their tab!) was too. freaking. good to pass up. Too bad your stomach wasn&#8217;t big enough to handle it all in one sitting. The beauty of leftovers is that you can box that bad boy up and enjoy it tomorrow between classes. Not only is it the best lunch ever, but it also saves you the time of preparing something new and the money you&#8217;d waste on a not-so-good Subway value meal.</p>
<p><strong>Loathe:</strong></p>
<p>Now, I&#8217;m all about recycling. Paper, plastic, and food. I love Bento boxes, and I think a great way to save the enviroment (and your wallet) is to pack up last night&#8217;s dinner into a little to-go box and heat it up the next day for a quick lunch. But I do think that certain foods should be eaten within a closed, contained space in which no one else can smell them, or be kept at home entirely. Have you ever smelled your roommate&#8217;s nauseating fish tacos wafting towards you from the public microwave? What about leftover curry dishes from last night&#8217;s Indian delivery that linger in your room for days? Gross.</p>
<p>And leftovers <em>never</em> taste as good the next day. Yes, they are probably better than anything you could whip up on the fly, but that hella good panini from last night loses its luster (and crispiness) after sitting in the mini fridge all night. And, of course, there is always that one little box of Chinese that gets shoved to the back of the fridge only to be found months later&#8230;.covered in fuzz&#8230;.when you go searching for that mysterious smell coming out of the kitchen.</p>
