Maybe because it’s supposed to be spring and it’s currently snowing outside (WTF!?), but I’ve been thinking an awful lot about Christmas recently. Then I got hungry. That’s because my go-to homemade gift for Christmases of yore has been homemade granola. What’s not to love? It’s healthy, hip, cute, and – well – tasty! Plus, it’s incredibly versatile; use it as a fro yo topping, a healthy between-classes snack, over milk for breakfast… the possibilities are endless.
If the weather’s got you down, stay in and make some of this stuff!
Ingredients:
(Serves two hungry munchers)
1 cup slow-cooking oatmeal (dry)
½ cup shredded coconut (optional)
1/3 cup raisins

Okay. I’ll stay away from chocolate this week, but my sweet tooth has been absolutely aching. The only thing that will satisfy it is one of those hearty, straight-from-momma’s kitchen kind of recipes. Easier said than done, right? I mean, besides those of us lucky enough to be bunking at Casa de Parental Units over Spring Break, getting a home cooked meal is nearly impossible.
Or not.
I present you with my super easy Rice-Leftover Pudding recipe!
Recipe:
1 1/2 cups of leftover rice (or boil ¾ a cup of dried rice)
1/3 cup sugar
1 egg, beaten
½ cup raisins
2 cups milk
1 tsp vanilla extract
¼ tsp salt

Do you need a super-quick and easy dessert recipe to take to a last-minute holiday party help ease the pain of a break up? Do you love peanut butter? Do you love desserts that are indulgent and–gasp!–healthy?
Read on, my friend.
This recipe for pumpkin peanut butter mousse (adapted from The Peanut Butter Boy‘s formula) is about as close to Food Pyramid-certified as you’re going to get. The only fat in this dessert is in the peanut butter (which is loaded with “good” monounsaturated fats, as well as protein), and hey, pumpkin is a fruit! Best of all, this recipe is multi-functional (see below) and takes less than five minutes to make.

Happy National Chocolate Day! Finally, a holiday for me. I can enjoy a mocha in the morning, some chocolate chip pancakes for lunch, and a chocolate milkshake for snack and not. feel. guilty.
I love October 28th.
In honor of this awesome (and, quite frankly, random) holiday, I decided to throw together some ridiculously good cookies. These little guys are the perfect way to celebrate my new favorite holiday. So, skip class and eat celebrate; it is a national holiday, after all.
Flourless Peanut Butter Chocolate Chunk Cookies.
Whatcha Need:
1 cup organic unsalted peanut butter (doesn’t have to be organic, but, you know…it tastes better if it is)
¾ cup granulated cane sugar
1 large egg, slightly beaten
