Pasta With Scallops: The Perfect Fancy Shmancy Summer Dish

The thing is, you could very easy (and for much less money than going out to eat) make a much more enjoyable and fine-dining form of carby goodness: pasta with scallops.

This is a particularly good dish for entertaining. Also, did I mention it’s delicious? Well, it’s delicious.

-1 pound of the pasta of your choice (but NOT something individual like bowties or elbows)

Stir Fry to Give Takeout a Run for its Money

23830058.jpgNothing makes me happier than stir fry. For one, it’s sooo delicious. Two, it’s filling. Three? It’s ridiculously easy to make, and serves you for 2 dinners. Again, because I’m a weirdo and hate cooking meat in my tiny kitchen, this is listed without meat, but feel free to add chicken or beef if you so desire…

You need:

1 small can chunk pineapple

1 red bell pepper, sliced

1 green bell pepper, sliced

½ red onion, sliced

1 cup mushrooms, sliced

½ cup carrots, sliced/chopped

1 cup broccoli florets

1 cup sugar snap peas/snow peas in pods

¼ cup almonds (can be omitted per allergies)

Teriyaki sauce

Soy sauce

Garlic powder

1 cup brown rice

Veggie Fajitas Made Simple

fajitas.jpgI personally don’t like to prepare meat, and so I don’t really eat it much at home. Feel free to add grilled chicken or beef to your peppers and onions as you see fit. I apologize in advance, because I don’t measure spices. I shake them until I like my flavor.

For two servings, you’ll need:

Sides:

6 small tortillas, corn/wheat/flour (whichever you prefer)

Salsa of your choice

1 cup shredded Mexican-flavored or Monterey Jack cheese

Low-fat sour cream

Chopped iceberg lettuce (or romaine if you prefer)

Guacamole (optional, and again… there’s no shame in store-bought)
