When I stumbled over this recipe, I fell off my chair. No, really. I have the bruises to show for it.
I don’t know about any of you, but I LOVE sushi (hard to tell, huh?). And, if you’re put off by visions of raw fish, don’t be! This is one recipe that won’t have ANYONE feeling squeamish. Unless you’re scared of scrummy food. Seriously. This is that good. And as a bonus (or not!) it won’t send you into a sugar induced coma like some other dessert sushi’s out there.
And if you’re still not convinced why you should make/convince someone else (Mom!) to make this sushi for you, well, then, let me change your mind.
In my adapted version, the ‘rice’ is made up of cashew nuts, honey and butter. Cashew nuts provide a good source of protein and fiber, and is also a good source of nutrients and minerals. On top of that, they also help maintain good cholesterol levels, protecting your heart. Sound good so far? Well, it gets better. Honey is rich in antioxidants (here’s a tip: the darker the honey is, the richer in antioxidants) and obviously, because of the fruit on top, there’s more good stuff!
The wasabi on the sashimi? (God, that’s bad.) This is super easy, and looks like you spent hours slaving away, when really, all it takes is about ten minutes.

Usually sports bore the crap out of me, but for some reason I love watching the Olympics. Maybe it’s because I used to swim on a team (a long, loooonnngg time ago) and kind of relive that heart-stopping moment of hearing the starting buzzer every time I see it on TV. Maybe it’s watching girls who are more in shape than I will ever be in my entire life flip themselves around on a balance beam and land on their feet. Maybe it’s all those hot, sweaty guys. Who really knows. For whatever reason, I heart the Olympics big time.
Since nothing makes me hungrier than watching other people exert themselves, I’ve devised the perfect Olympics Dinner. It’s Team USA themed, scores a 10 in the taste factor, and is relatively easy to make. Join me in celebrating athleticism with decidedly non-heathly food, won’t you?

All American Hamburgers:
2 stalks of celery
2-3 pads of butter
Ground meat (enough to serve 4)

It was my brother’s birthday earlier this week. Even though he’s thousands of miles away from where I am right now, I wasn’t about to pass up a chance to make and eat cupcakes.
He requested marble, so I improvised. These may not be as beautiful as the marble cupcakes you see in stores (OK, so they’re kind of globby, to be honest), but they taste better, and the melted chocolate is the finishing touch of magic that no store can give you.
To make 6 small cupcakes, here’s what you need: ½ cup flour, ¼ cup plus one tablespoon sugar, 1 tablespoon melted butter, ¼ cup very hot water, 1/8 tsp baking soda, 1/8 tsp salt, ½ tsp vanilla, 1 egg yolk, 2 tablespoons sour cream, about 1 ½ ounces of chocolate, and a tiny bit of milk or cream. Nothing makes me happier than stir fry. For one, it’s sooo delicious. Two, it’s filling. Three? It’s ridiculously easy to make, and serves you for 2 dinners. Again, because I’m a weirdo and hate cooking meat in my tiny kitchen, this is listed without meat, but feel free to add chicken or beef if you so desire…
You need:
1 small can chunk pineapple
1 red bell pepper, sliced
1 green bell pepper, sliced
½ red onion, sliced
1 cup mushrooms, sliced
½ cup carrots, sliced/chopped
1 cup broccoli florets
1 cup sugar snap peas/snow peas in pods
¼ cup almonds (can be omitted per allergies)
Teriyaki sauce
Soy sauce
Garlic powder
1 cup brown rice
