The Weekly Ten: Comfort Food

Everyone has those days.

You know, those days? When all you want to do is curl up in a ball in your sweats, sleep, watch some terrible Netflix movies and ask yourself why life can’t be like a Julia Roberts movie. (In fact, I’m having one of those days right now.) But those days are never quite complete without that pint of Ben and Jerrys, that pizza with pineapple, or tortilla chips and salsa.

Comfort food. It’s a necessity for late night binging, breakup wallowing, and rainy days with Real Housewives marathons. Everyone has a favorite, but these? These top ten classics are some comfort foods every gal indulges in at some point or another.

10. Pizza. With extra cheese. And all the toppings. Or none of the toppings.  My personal favorite is a single, original, round slice. But hey, to each her own.

9. Mashed Potatoes. Just as delicious when you have a toothache and can’t eat solid foods as they are paired with a juicy steak or with nothing at all.

8. Cheeseburger. An American classic. (Even if it wasn’t actually first created in America.) Burgers are great because they can be as quick and simple as a Big Mac or as fancy and fab as something with jack cheese and onion rings, but either way they’re delicious.

Intro to Cooking: Grilled Halloumi Cheese Sandwiches

Happy Fourth of July! Hopefully you’re reading this not too far from a grille or barbecue, because they’re necessary for today’s recipe! Your mouth is probably already watering for hot dogs and burgers, but to give your holiday menu some kick, why not include this week’s ingredient—a personal favorite of mine: halloumi cheese!

This Week’s Ingredient: Halloumi Cheese

I discovered this cheese while traveling abroad and it remains my absolute favorite to this day. I would tell you that it can’t be topped—but actually, that’s the point! Because of its unusually high melting point, halloumi cheese can be grilled or fried and retain its form, so it can be layered, stacked, or tossed with other ingredients. There is nothing quite like relishing a steamy, smoky bite of halloumi, fresh off the grill. The cheese is native to Cyprus, has a semi-salty flavor and deliciously flaky texture, and is typically made from sheep and/or goat’s milk. Put Down the Can of Chili and Try This Instead

All right so it might not be cold yet, but that doesn’t mean a bowl of something hot wouldn’t hit the spot. If you’re too broke to swing by the nearest deli every time you get a massive craving for a soup and sandwich, try this recipe for chili. It’s super easy, great for dorm rooms (assuming you can use a crock-pot there…or can hide it from your R.A.) and it makes enough to last a lot longer than one of those eensy bowls of Broccoli Cheddar soup (still, mmmm broccoli cheddar soup…).

Chili is extremely customizable. For instance, depending on whether you like yours really hot or not so much, it isn’t hard to adjust the spice of this recipe. Chili is kind of a free-for-all dish, meaning, throw whatever the hell you want into a pot as long as it sounds good. (Caution: do not try this when inebriated. Happy Camping: Staff Orientation

camp_save_bay.jpgBeing a sleepaway camp counselor is nothing like being a camper. If any of you forgot what camp is all about, let me give you a not-so-hypothetical situation:

You’re sitting on the side of the soccer field while the sun is drawing a tan line of your favorite flip flops on your feet. You’re at the front of the massage line (what could be better?) working on your latest pink and purple string friendship bracelet. The heat reminds you to bring your squeeze breeze to the next activity and you cannot wait for rest hour to play spit on your best friend’s top bunk, which, of course, you always win.

Since I arrived at camp, my daily activities have been slightly different. The campers have not arrived yet and my day has run a little something like this:

7:30 AM: Bugle call for wake up

Grilled Cheese Is Genius

24810757.jpgI apologize to the lactose intolerant, this may seem a bit insensitive. But I love me a grilled cheese.

Something about grilled cheese is so fantastically comforting. It’s crunchy, yet gooey. It’s not too hot, it provides the perfect amount of warmth. It can be dunked in tomato soup, or can stand alone. And anyone from the age of 8 onward can make it! Just be careful not to burn it.

A recipe for grilled cheese may seem foolish, but it can be an art form. And yummy as the diner-style ones are, you can make a healthy one in two seconds. And it’s still delicious.

Sammich for one:

2 slices of 2% milk American cheese

2 slices whole wheat or multigrain bread

non-stick cooking spray

frying pan

Assemble your sandwich (I have faith you know how to do this). Spray the exposed bread on each side with non-stick cooking spray and put them in the frying pan, letting the bottom piece of bread toast and allowing the cheese to start getting melty. Flip as you deem appropriate to toast the other side and melt the rest of the cheese. I prefer my bread to be a golden brown but some people are pickier about the crunch factor. Read More »


Four Easy (I Mean EASY) Lunch Ideas!

23237431.jpgI’m probably one of the hardest gals to please when it comes down to what’s for lunch.

I love flavor, I need my food to be moderately healthy, not too expensive, and easy to make. I do love cooking elaborate meals, but not in the middle of the day when I’m consumed with everything else I’m doing.

So over time, a few simple lunches have worked their way into my mental cookbook, simple lunches that I’m now going to share with you! Here are four options that are delicious, easy, and relatively cheap to make, as well as healthy for you…well, healthier than Wendy‘s…that’s for sure.

1. Toast whole wheat bread. Spread your favorite hummus across both pieces of the bread (I prefer using the really spicy stuff). Then add turkey or your favorite lunch meat.
