I have a secret: it took me forever to fall in love with parfaits. I know! I know! For whatever reason, for a long time, I felt really opposed to mixing food… I was that person who kept everything on the plate from touching. Needless to say, discovering the deliciousness of yogurt parfaits was a groundbreaking day for me.
Yogurt is really one of those foods that is great for you. It’s filling, it’s delicious, and studies have shown that women who eat at least three servings of low-fat dairy a day are more likely to have slim waists! Um, added bonus? Yes. Getting enough calcium is very important for us ladies and yogurt is a delicious way to accomplish that.
Mixing yogurt with berries is just another way to up your health factor. Berries, especially blueberries, strawberries, and blackberries, are loaded with antioxidants and vitamins.
The one caution about this website has to do with the granola. Granola is filling and can be a great way to add crunch and flavor… but make sure to read the label on the granola you buy very carefully! Granola can have a lot of empty calories in the form of added sugars. I like to stick with all-natural flax granolas or granolas that are primarily oats and honey. Definitely beware of added sugar!
Now, let’s get on with the recipe!

I love peanut butter. As in, please don’t judge me but I could sit in front of the TV with a spoon (or my finger?) and eat it like a bowl of ice cream. Or strawberries. If only peanut butter had the same fat and calories as strawberries. Then I’m certain all of life’s biggest problems would be solved.
If I am going to indulge in my beloved PB I want it to be GOOD. We should all know by now that the stuff we grew up with (read: peanut butter made with hydrogenated oils, unnatural products, etc.) is so bad for us. And in my (not so humble) opinion, why eat a higher calorie food that’s bad for you when you can eat a version that is actually good for your body?
….And, might I add, tastes a hell of a lot better.
If you don’t know it yet, all-natural peanut butter is good for you (in portion control, as I’ve learned the hard way). It’s packed with protein and healthy fats, and it makes for a great snack! I’m a fan. A big fan. Quite possibly a bigger PB fan than a Badgers fan…but don’t tell anyone. I consider myself a Peanut Butter aficionado if you will. A connoisseur. Truth be told, if there was a talk show about Peanut Butter, I would be the Oprah Winfrey. Or at least Ryan Seacrest. And ladies and gentleman, I believe I’ve found the Mona Lisa of the natural peanut butter world: Read More »
When every guy you know is a complete let down, your major is still undecided and you can’t find the perfect pair of boots, you feel defeated/without control/craving a brownie.
But just because some things never go right, there is one thing in your life that is 100% up to you: your health.
Oftentimes, life feels so out of your control that you may begin to give up, which usually ends with a pint of ice cream, binge eating your way through the fridge or forgoing the gym altogether in favor of trashy reality TV in bed. Well, I am here to tell you to STOP. Just because something else didn’t work out the way you wanted it to does not mean you should let your diet, body and health go out the window as well.
Easier said than done, I know, but next time you’re thinking of kicking your feet up with a large pizza instead of going for a jog, run a few of these motivating factors through that head of yours. Better yet, print this out and tape it on your mini-fridge. Bye bye, excuses! Read More »

[Everyone’s got a vice, a bad habit, something they know they need to change. Unfortunately, everyone also has a million excuses why they just can’t do it. Not anymore. Every month we will be following a different CollegeCandy writer as she takes on a personal challenge. And this month Meredith is giving up junk food. Yes, really. Her first week was good. Great, even. Then life got in the way. This week, she's turning things around.]
I ate mozzarella sticks. And I’m not ashamed.
Not much has changed since my tough week last week. I’m still adjusting to the single life, which I love more and more every day. The nausea is the only thing that has really persisted, which means that I will unfortunately probably have to see a doctor just to make sure that nothing is medically wrong with me. Though I’m convinced it’s nothing more than the residual effects of Lady Gaga’s meat dress. Ew, I don’t even like thinking about it. Even if she was wearing a lean protein.
So finally on Tuesday, I felt up for a late night snack at the dining hall. The good news is the mozzarella sticks smelled like heaven. The bad news is they definitely did nothing for my post-breakup bouts of nausea. I could have sworn that they would have healing powers, that I’d take one bite and instantly feel happy and free and content. But alas, I woke up the next morning as sick as ever. I’m definitely not mad at myself for eating them, though. If everything this month had gone according to plan and I was eating like Jillian Michaels every day, then I probably would be pissed at myself for eating disgusting fried cheese mid-month. But, that’s not the case and if anything, I needed the calories. Read More »

This post provided by college nutritionist, author, and all around excellent source of healthful info, Melanie Jatsek.
Campus dining halls are amazing places. Besides a Las Vegas buffet, where else can you find Chinese food, Mexican food, and a pasta, deli, salad and dessert bar all in one room? They are amazing, but amazing doesn’t always equal good for you. Sometimes it can be down right challenging to navigate through the lines and find something that isn’t fried or covered in some sort of sauce. To make it easy for you, here are the top 5 dining hall food traps to watch out for. Some may surprise you!
Wraps or Burritos:
You’re probably wondering why. Most tortillas used to make wraps and burritos contain trans fats (trans fatty acids), which are even worse for you than saturated fats! The scary thing about them is, they make their way into your brain and disrupt communication between your brain cells. It’s sort of like when you use your cell phone to call your friend’s cell phone and the two of you keep dropping the call – you can’t seem to make a connection! The only way to tell for sure if a tortilla contains trans fats is by looking at the nutrition facts label on the package for the words “partially hydrogenated oils.” Obviously you can’t do this in your dining hall, so you may want to ask the food service staff to take a peak for you. If you’ve been a CollegeCandy reader for some time, you know we run our Intro to Cooking series every week, where even the most kitchen-shy co-ed can find easy, yummy recipes to please her suitemates (and sweet tooth!). Well, we’ve changed up the syllabus for Intro to Cooking: you’ll still get the fabulous recipes you love, but we’ll be including background nutritional info on specific ingredients that are must-haves in every college girl’s pantry.
This Week’s Ingredient: Sugar Snap Peas
It’s well known that a surefire way to rev your metabolism and curb hunger is to have a healthy snack on hand for a quick nibble between meals. But have you ever noticed that most of the go-to snacks (raisins, granola bars, apples) we pack to stabilize blood sugar are really just…sugar? Although many of these items are perfectly healthy and have naturally-occurring (rather than added) sugars, there is such a thing as too much of a good thing. So if you’ve been looking for a tasty, portable snack that won’t give you a sugar crash, look for a different kind of sugar: sugar snap peas!
For a one cup serving size, these little babies (a hybrid between the green and snow pea) weigh in at just 41 calories, packed with riboflavin and dietary fiber. And while most of their calories do, in fact, come from natural sugars, consider that a single serving contains but 4 grams, while just one small box of raisins contains a whopping 25 grams.
Easy Snacks
1. Toss a handful in a sandwich bag with some sea salt and/or some parmesan cheese.
2. Serve with hummus and carrot sticks as a side.
3. Serve with cold pasta as a light and summery meal or warm with a little olive oil, basil, and chicken for a complete dinner. Read More »

The summer solstice has passed, school is out, and if you’re like me, you’re probably sitting in a pool right now. A pool of your own sweat, that is. Yes, it’s that time of year when it’s just too hot to even think about cooking, let alone come up with a recipe. But if the thought of another freeze-pop dinner makes you gag (I’ve totally been there), never fear—CollegeCandy is here!
This week’s ingredient: Blueberries!
Not only are blueberries in season, but they are an inexpensive and low-calorie (84 calories per cup!) snack. They’re loaded with elleagic acid, which prevents cell damage, as well as vitamins C and E, manganese, and both soluble and insoluble fiber. Still, be sure to wash them before eating, because they are among the foods upon which pesticides are most frequently found.
Easy Meal Ideas
1. Toss with a salad, oatmeal, or yogurt for a sweet boost to mealtime standards.
2. Serve with cool-whip or other crème for a refreshing dessert (hold me back…!)
3. Did you know many health stores sell dried blueberries? If you’re tired of raisins or thought craisins too sugary-sweet, these babies might be the perfect portable snack. Read More »

I love me a good snack bar. 4pm rolls around and I’m out and about – walking to class, walking to the library, skipping class and shopping – but like clockwork, 4pm rolls around and I want a snack. And as tempting as those fresh baked chocolate chip muffins are downstairs in the lib (I swear they waft the smell through the vents), I know not only will that muffin contribute to a much larger muffin (top), but with no protein I will be scavenging for food like a boy from Lord of the Flies in T-30 minutes.
Enter: the snack bar.
Sweet enough to satisfy and protein-y/fiber-y enough to keep me focused on studying/shopping until dinner.
And now I have two more favorites to add to the mix: Read More »

Did you know that May is Celiac Disease Awareness Month? A proclamation by the New York State Senate, in tandem with many promotions, articles, and events by celiac groups has been responsible for the tremendous buzz about this often misdiagnosed disease. In this week’s Intro to Cooking installment, not only will you get some background info on celiac disease, but some tasty gluten-free tips!
What is celiac disease?
Celiac disease is the proper name for those with intolerance of gluten, a protein found in wheat, barley, rye, and triticale (and for most, oats). Many conventional foods, including cereal, pasta, bread, beer, cookies, and other processed foods, are off-limits to those with Celiac disease. There is no known cure for the disease, and its only treatment is a lifelong commitment to a gluten-free diet. Accidental ingestion of gluten can result in nausea, vomiting, constipation, diarrhea, rash, or a host of other symptoms.
OMG you can’t have bread?! What do you eat? Will going gluten-free help me lose weight?
Contrary to popular belief, going gluten-free is not a surefire weight loss strategy. For those with Celiac disease, elimination of gluten may help them gain weight, because the ingestion of gluten blocks the absorption of proper nutrients and result in malnutrition. However, eliminating gluten from one’s diet and focusing on eating lots of fruits, vegetables, beans, lean meats, dairy, and other whole foods will contribute to a healthier lifestyle. Still, Celiac Disease Awareness Month is all about promoting wholesome, tasty, gluten-free alternatives to the foods we love! Read More »
