Intro to Cooking: Three-Ingredient Salsa

You’ve been eating nothing but junk food for the past week and now you want to eat healthier. However, you don’t want to surrender eating what tastes good, either. Plus, you have another party coming up and no time to cook for it. Yes, there’s a recipe for all of that. Today I bring you three ingredient salsa. Why buy it from the store when in three minutes you can have gourmet?

Today’s ingredient: Red Mango

Mango is high in iron, antioxidants, Vitamin A and Vitamin E while remaining low in carbs. It also contains phenols, a nutrient associated with cancer prevention. Eating mango also relieves clogged skin pores. This fruit has a refreshing flavor, but what makes it even more perfect for inclusion in salsa is that it helps prevent acidity and indigestion.

Intro to Cooking: Savory Snack Platter

Right about now, I think all of us have at least three things in common. We’re finishing finals and we’re getting ready for the holidays, and therefore we have no time. I’m sure just about all of us are somewhere cold, too. And on top of that, we’re probably getting ready for some serious holiday eating. My recipe today is a quick, warm, and (dare I say) healthy way to break into the dining-hall free world of Winter Break.

The Ingredients:  Sweet Potato, Cauliflower, and Plantains

Sweet potatoes, as this recipe will prove, actually make for a very savory snack. Among other things, they are a great source of fiber and beta-carotene. Cauliflower is rich in folate and Vitamin C. Plantains are high in Vitamin A and potassium. Not only do these three foods power you with a wide variety of nutrients, they’re also pretty cheap and taste remarkably like junk food (if you cook them right, that is).

Ingredients:

1 sweet potato
1 head of cauliflower
1 green, starchy plantain (the riper they are, the sweeter they are, so a really ripe plaintain will ruin this recipe)
1-2 TBS of the oil of your choice (my favorites are grapeseed or coconut oil)
Salt and pepper to taste

Intro to (Fancy!) Cooking: Baked Brie

In case you haven’t noticed, the Oscars are tonight. (Have you made your predictions yet? You only have a few hours left to enter!) If you’re anything like me, that means you’ll be perched on the couch, surrounded by friends, starting at 5pm to catch, and talk about, all the red carpet drama.

And at about 6pm, after you’ve discovered that Brad and Angie aren’t actually coming and your stomach is growling, you’ll be wishing you had something to munch on. And by “munch” I mean “devour.” But just like you can’t serve Natty Light at your Oscar bash, you really can’t chow down on Sun Chips and Swedish Fish for such a special occasion.

You need a snack fit for the evening and nothings says “Fit for a red carpet affair to impress your friends but still totally easy and OH MY GOD SO DELICIOUS” quite like baked brie. I swear, this recipe is easier than opening a bag of Tostitos and so. much. better. It only takes a few minutes, so run to that campus market, get the goods, and you’ll have plenty of time to whip this up somewhere between studying and settling in for the big night. Intro to Cooking: BLT Bites

exps66_TH1425C29DIf there is one thing I have accepted about myself, it is that I always, ALWAYS, prefer appetizers to entrees. I don’t know why, but for some reason those little bits and pieces always sound way more enticing than a big ol’ plate of….just about anything. Maybe it’s because I have a hard time settling on just one thing, but this goes a long way in explaining my love of party food.

I love all things bite size (well, when it comes to food…), packed with flavor, and eaten with my fingers. One of my personal faves in this category is BLT bites. I was a late–comer to the BLT party (I thought I didn’t like bacon for years. How crazy is that?!)  but now that I’m on board, I can’t get enough. These little gems have the same enticing flavor combo as the big sandwich, but they’re mini, so they’re instantly better. The filling is jam-packed with unbelievable flavor – smoky bacon, sharp, salty cheese, fragrant herbs – while the ripe tomato shell gives it a fresh and summery feel. Deeeee-licious.
