Who doesn’t love a little Southern cooking? Fried, greasy goodness? I wouldn’t trust someone who didn’t dream about it once in awhile.  And better yet, who doesn’t love a little Southern dessert? There is nothing. better. on earth. (I love you, Paula Dean!)

This recipe comes from my best friend’s mother, Mrs. D, a Southern mom who doesn’t have time to bake like all those other mommas.  These Oreo Balls are easy, quick and delicious, which is perfect for the college girl with a sweet tooth. You’ll need zero to no cooking experience or talent, so don’t fret if you’re not Betty Crocker. Hell, you don’t even need a full kitchen; you can make these balls of heaven right in your dorm room.

Intro to Cooking: White Chocolate Macadamia Nut Cookies

There’s nothing like fresh-baked cookies (or even just the dough!) to make your day worth living, and this recipe for white chocolate macadamia nut cookies is pure deliciousness. Sure, you may think you’ve had good white chocolate macadamia nut cookies before, but you ain’t tried nothing yet.  Using vanilla and almond extract gives these cookies extra special flavor and they’re melt-in-your-mouth tasty.

I made them for my BF’s family (gotta try to impress them, right?) and they went absolutely nuts (tee hee) for them. They were actually trying to barter with one another for just one more cookie. If that’s not a good sign, I don’t know what is.

You may want to make a few extra if you plan on sharing them. Or prepare to break up some fist fights.

Ingredients:

1 cup butter, softened
3/4 cup packed light brown sugar
1/2 cup white sugar
2 eggs
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

Simple Stir-Fry – Even You Can Do It

For those of you without a meal plan or with any desire to remain healthy, here is a SUPER simple recipe I came up with. With tons of options, you can almost bet that you can find the ingredients in your fridge right now!

Ingredients:

2 boneless, skinless chicken breasts

3 cups veggies of your choice (some good ones: onions, carrots, broccoli, cauliflower, peppers)

2 tbsp vegetable oil

2 tbsp soy sauce

1 tbsp another flavorful sauce (teryaki, barbecue, etc) – it’s your choice, be creative!

Get Loaded, as in, Loaded Baked Potatoes

loaded baked potato.jpgI’ve detailed my love for potatoes before, and here’s a recipe that never fails for a filling lunch.

You’ll need:

One large baking potato

Half cup mixed vegetables of your choice (Zucchini and yellow squash are great, bell peppers and onion are a good topping, or some people love broccoli)

¼ cup salsa

¼ cup light sour cream

2 tablespoons 2% milk shredded cheese of your choice (Monterey jack is a personal fave)

Spray butter

Salt and pepper to taste

Bake your potato for about an hour at 350, or until you can stab it with a fork and remove it easily.

While your potato is nearing completion, heat vegetables in a small frying pan coated in non-stick cooking spray. Season as desired. Read More »


Bananas in Brown Sugar with Rum: Yum!

Well, even if you don’t think out loud like some of us, no doubt you’ve run into a predicament that includes you needing to make something on the fly to impress someone, or just simply feeling a keen desire to impress your own stomach. But, if you’re anything like me, you’re A) a little lazy and B) too busy to make some kind of complicated recipe that will take hours and then be eaten in minutes.
