Stuck inside this weekend because of an(other) excess of snow or lack of money? If you’re already missing all of that free wonderful food from home, practice your improvisatory skills with DIY Thai!
Featured Ingredient: Coconut
Coconut is rich in protein. It’s a favorite among fitness freaks (and CollegeCandy writers) for its ability to promote muscle growth. Coconut is also rich in Calcium, Vitamin A, and (good) fats. Studies show that it also helps maintain proper thyroid and kidney function. That makes it the perfect ingredient for a satisfying, tasty, easy, healthy meal!
You Will Need:
2 TBS coconut or sesame oil (or cooking oil of choice)
¼ cup shredded coconut
1 small onion
1/2 cup broccoli
1/2 cup carrots
1 Package firm tofu
4 TBS peanut butter (or tahini sauce)
1 TBS soy sauce (optional)
Ginger or coriander to taste (optional) Read More »

Ugh. Finals. Is there anything worse? You sorta coast through the entire semester with nothing to do but some really boring reading and then – BAM – you have to take a giant test that determines your entire grade (and possibly future). Yeah, that’s not stressful or anything.
So now you are stuck in the library for days at a time trying to stuff 4 classes worth of info into your alcohol-tainted brain. And you need an effing break! What do you do? Here is what CollegeCandy’s writers do for their much needed study break:
Sues – University of New Hampshire: My whole day is pretty much a series of study breaks since I continuously get sucked into the Internet and realize that I’m online shopping, reading blogs, and basically doing everything but studying. If I step away from the computer, I go to the gym!
John – UConn: My study break is when I stop drinking coffee in order to drink beer.
Kari – FSU: My study break looks like Phish Food, a well earned back rub from my boyfriend, and a wonderfully distracting episode of The Office…30 minutes of Jim Halpert’s face will perk me up any day. Read More »

The other night, while eating dinner with a friend at one of the 4874 Thai restaurants in my neighborhood, we got into a discussion about being single.
“I’ve decided that deep down, no girl really wants to be alone,” my friend announced as she cut into her spring rolls. “Even if she says she doesn’t want a boyfriend, if the right guy stepped into her life, she’d take him.”
“What about So-And-So?” I asked, naming another mutual friend. “She kept saying how happy she was without a guy, and how she was too busy anyway. She seemed fine.”
“Didn’t you hear? Last month she landed a dude.” My friend handed me half of her spring roll, using the other half to point in my direction. “She bumped into this guy at a party and two weeks later she was updating her Facebook status to read So-And-So is totally in love.”
“Ew. Really?” Inwardly, I was jealous. When was the last time I had updated my Facebook status to say I was totally in love? Never, I realized, since the last time I was in love, Facebook hadn’t even been invented.
“Really.” My friend declared. “Us women all need to face the fact that being single just isn’t our natural stasis.” Read More »
