Intro to Cooking: Three-Ingredient Salsa

You’ve been eating nothing but junk food for the past week and now you want to eat healthier. However, you don’t want to surrender eating what tastes good, either. Plus, you have another party coming up and no time to cook for it. Yes, there’s a recipe for all of that. Today I bring you three ingredient salsa. Why buy it from the store when in three minutes you can have gourmet?

Today’s ingredient: Red Mango

Mango is high in iron, antioxidants, Vitamin A and Vitamin E while remaining low in carbs. It also contains phenols, a nutrient associated with cancer prevention. Eating mango also relieves clogged skin pores. This fruit has a refreshing flavor, but what makes it even more perfect for inclusion in salsa is that it helps prevent acidity and indigestion.

Nature’s Lunchbox: A Stuffed Pepper

Want a portable meal that’s delicious and nutritious? Forsake the chili bread bowl in favor of the stuffed pepper.

You can fill this guy with whatever suits your fancy—pork, chicken, beef, scrambled eggs—and you can also pack it with flavor and texture. Where else can you find protein, carbs, veggies, and taste all in one convenient, edible package the size of a man’s fist? Nowhere!

To make one stuffed pepper like the one in the picture, you’ll need the bell pepper (any color works, but I prefer to use green), half of one small onion, one garlic clove, a little bit of olive oil, a few ounces of ground beef, about three tablespoons of uncooked rice, 4-6 tablespoons of chicken broth, two tablespoons of tomato sauce or tomato paste, three tablespoons of parmesan or romano cheese, and seasonings to taste (basil, salt, pepper, etc.). img_3157.jpgI’ve been living on my own for a while now, and I miss some things about home. My dog…cable TV…hanging out with my parents while not paying rent…oh, yeah, and home cooking.

You might think a salad can’t justifiably be called “cooking,” but I’d have to disagree. This salad isn’t just thrown together…it’s lovingly crafted using carefully chosen ingredients that are fresh, yummy, and healthy.

My mom thought up the specific combination, so I have to give her the credit. And okay, even though this salad isn’t figuratively thrown together, it CAN be literally thrown together, which is a great part of its appeal.

Yummy Weekday Dinner: Spinach-Stuffed Pasta Shells

Mmmmmm. When I was little, my mom sometimes made jumbo pasta shells stuffed with a mixture of diced mushrooms, ricotta cheese, spinach, and ground meat. They were fantastic, but a little too creamy for my taste. These, on the other hand, are not creamy at all and are every bit as good as my mom’s. They taste especially excellent with a nice hunk of Italian bread and olive oil.

When I make them, I sub out the ground pork for ground beef because I usually don’t have ground pork lying around. You can probably use frozen spinach if you want, but the fresh spinach really makes a tremendous difference. Also, I normally leave out the nutmeg—you can’t taste it in the final product, and I’m not a big nutmeg fan, anyway.

I also cut down on sodium and fat a little bit by replacing the heavy cream with light cream or milk (works just fine) and omitting the salt altogether (usually, the tomato sauce will provide all the saltiness you need). Read More »
