Anyone Can Cook: No-Bake Chocolate Cheesecake Truffles

Are you the girl whose kitchen is notoriously clean…because you literally never cook? Maybe you flunked Home Ec while simultaneously almost setting your high school on fire, but that doesn’t mean you’re sentenced to a life where the Chinese takeout place knows your order by heart. These recipes are so easy that anyone can make them and fool everyone into thinking they’re a chef.
It’s National Cheesecake Day! Why there needs to be a holiday just for cheesecake I have no idea, but I’m not complaining. I’m not normally a cake person, but I absolutely love cheesecake. There’s no other dessert like it. This week, I found this awesome no-bake recipe, tailor made for this cool holiday.
If you love cheesecake and chocolate as much as me, this is the recipe for you! This recipe is super quick – it really shouldn’t take you more than half an hour to finish. Another great thing? You don’t need an oven to make them, making it the perfect dessert for summer because who really wants to turn on a hot oven when it’s already like 100 degrees outside? Not me.

8 ounces cream cheese
4 cups powdered sugar
5 ounces bittersweet dark chocolate, melted (I used 70% cacao)
1 teaspoon vanilla
Coatings for truffles:
toasted pecans, chopped (or other nuts)
flaked coconut (try it toasted)
cocoa powder


Using a mixer, slowly add powdered sugar to cream cheese mixing well after each addition.
Add melted chocolate and vanilla and mix until smooth.
Chill for several hours.
Shape into 1″ balls.
Roll in coatings.
Chill, covered until ready to serve.
