Most of us want to stuff our faces with candy each October, but that doesn’t mean we should. Given the obscene amount of sugar classics like candy corn and mini Butterfingers, it’s no wonder most of us develop a sweet tooth this time of year. These candies are obviously fine in moderation, but if you’re hosting an all-night rager, you might want to consider some other options.
On the bright side, you don’t have to be a total dud. Check out our list of healthy Halloween snacks that are equal parts delicious and spooky.
After boiling 10 eggs, peel them and cut them in half longways. Scoop the yolk from each egg and place it in a small bowl. Stir in 1/4 cup of mayonnaise, 2 tsps. of Dijon mustard and 3/4 cup of paprika to the bowl. Fill contents into egg halves and place an olive slice on top for the pupil. Place a few slices of roasted red pepper strips around the olive to add veins.
Cut a medium size pumpkin to look like its mouth is open. Arrange your delicious guacamole recipe so that it’s coming out of the pumpkin’s mouth and surround with tortilla chips.
Add olive oil to a pot over medium heat. Insert chopped onion when oil is hot and saute for five minutes. Add 3 cups of vegetable stock, 1 can of diced tomatoes in juice, 1 can of black beans and 2 cans of pumpkin puree. Stir ingredients and bring to a boil. Reduce heat and mix in 1 cup of heavy cream, 1 tablespoon of curry powder, 1 1/2 tsp. of cumin, 1/2 tsp. of cayenne pepper and salt to taste. Simmer for a few minutes and garnish with fresh chives.
Slice the ends off each kiwi so they sit upright. Starting at the cut end of the kiwi, use a vegetable peeler to begin to remove the fuzz, pulling the skin away in jagged bits so it looks like Frankenstein’s hair around one end. For the bolts, push one pretzel stick through the kiwi so it comes out of both sides. For the eyes, press two chocolate chips in the kiwi. For a mouth, cut a slit in the kiwi and insert an almond slice or a smaller pretzel stick.
Line a cooking pan with parchment or wax paper. In a medium size bowl, mix four non-dairy yogurt cartons and 1 tsp. of coconut oil. Pour contents into a pan then scatter 1/4 cup of blueberries, 1 kiwi (peeled and sliced) and 1/2 of a nectarine and googly eyes on top. Place into a freezer until it has set and cut bark into small pieces to freak out your guests.
