Thanks To Science, Clear Pumpkin Pie Now Exists

“Pumpkins are orange,” I repeat to myself. I say it again, “Pumpkins are orange,” my sensesĀ are calm. I pull up photos of Jack O’Lanterns and pumpkin spice lattes and repeat again, “Pumpkins are orange.”

This mantra is one that is necessary. I didn’t suddenly go color blind, I swear. I just stumbled on these photos of clear pumpkin pie. That is right. CLEAR pumpkin pie. It is making me question everything I know.

The restaurant, Alinea is the one responsible for the clear pie that is going viral. Chef Simon Davies shared the world’s first glimpse of a mini slice of the clear dessert. At first, it looks unreal because all you can see is crust and a small dollop of whipped cream.

In the comments, Davies explained how the restaurant was able to achieve a clear filling. According to Delish, they used pumpkin distillate. A special machine can create a clear liquid that will taste like whatever distilled flavor you put in it. So the clear filling tastes just like a classic pumpkin pie.

The owner of Alinea, Grant Achatz shared a larger version of the pie hinting that it will be added to the menu soon.

Reservations are hard to snag at Alinea, it’s a critically acclaimed restaurant, so those who get to try the clear pie please post pictures!
