Summer is getting closer and closer! The weather is getting warmer, and ladies are starting to bust out their cute sandals. The only thing that’s missing is the perfect summer treat. This recipe is tailor made for one of those scorching summer days when craving something to help you beat the heat. This delicious concoction will transform your favorite ice cream into this super easy pudding!

Ingredients
4 1/2 cups whole milk
1 cup of sugar
1/3 cup of cornstarch
1/2 teaspoon of salt
5 large egg yolks, beaten
2 teaspoon vanilla extract
1 cup of mini marshmallows
1 cup of almonds, toasted and chopped
1/2 cup mini chocolate chips
Directions
1. Heat up the 4 cups of milk in a pan over a medium heat until it starts to steam.
2. Whisk up the sugar, cornstarch and salt in a large bowl. Then, whisk in your egg yolks and the last 1/2 cup of milk.
3. Next, whisk half of the hot milk into your egg mixture until it gets smooth and then start to whisk your egg/milk mixture into your saucepan and cook this over a medium heat, while constantly whisking until it starts to boil and then until your mixture starts to thickened to a pudding-like consistency for 3-4 minutes.
4. Remove the saucepan from the heat and begin to stir in the vanilla extract.
5. Let your mixture cool a bit and stir it slightly so that a skin doesn’t start to form. Place a piece of plastic wrap on top and place it your fridge for about 4 hours so, that it can get completely cooled and thicken up.
6. Before serving, whisk the pudding quickly until it gets smooth and creamy. Gently fold in your marshmallows, walnuts and chocolate chips.
7. You can even top your pudding off with even more delicious chocolate chips, and your yummy pudding is done and ready to devour!
